The symposium brought together a distinguished group of invited scientists from around the world who are leaders. Many attendees made poster presentations which increased the exchange of ideas and sti mulated informal discussion.

Book excerpt: Broiler breeder chickens are the parent stock used to produce broiler chickens raised for human consumption and have long been caught in a welfare dilemma. The immensely successful selection of fast-growing meat-type chickens over the last 80 years has created a remarkably efficient meat-producer and given us access to cheap chicken meat but has also created health problems for the animals. These problems especially affect the breeder generation, which must be raised with strict feed restriction to limit weight gain and thus maintain physical health and normal fertility. At the same time, however, feed restriction causes chronic hunger and feeding frustration with reduced animal welfare as a result. In the EU alone 60 million breeders are affected annually and although the problem is well-known within the industry, there is financial incentive to keep selecting for even higher growth potential in broilers, further increasing the problems for broiler breeders. Many strategies for reducing the impact of growth restriction on breeder welfare have been suggested and are usually aimed at somehow increasing the amount of feed given at feeding times. This can be done either through adding bulky fibers to the diet or by reducing feeding frequency. In this thesis, focus is on the latter as we explore the effects of intermittent fasting (IF) on the welfare of young broiler breeders as well as wild-type Red Junglefowl. Intermittent fasting, or “skip-a-day” feeding, is supposedly the most common feeding strategy for broiler breeders worldwide but is perceived as welfare-reducing and thus illegal in Sweden and several other European countries. In spite of this, the scientific knowledge of how this type of feeding affects chicken welfare is scarce. Assessing the overall effect of IF on breeder welfare is complicated by large variations in both physiological and behavioral parameters between feeding and fasting days, but it does appear that chicken welfare is improved at least on the feeding days of IF regimens. It also seems that some of the health benefits reported from mammalian studies of IF may apply to chickens as well, although behavioral indicators still point to welfare issues unless the level of feed restriction can be relaxed. In comparison with daily feed restriction, IF appears to increase the motivation for feed consumption but to reduce the motivation for appetitive behaviors such as foraging, which may explain why birds fed on this type of schedule are often reported as calmer.

Book excerpt: Amino acids (AAs) are not only building blocks of protein, but are also signalling molecules as well as regulators of gene expression and the protein phosphorylation cascade. Additionally, AAs are key precursors for syntheses of hormones and low-molecular weight nitrogenous substances with each having enormous biological importance. For example, physiological concentrations of AA metabolites (e.g., nitric oxide, polyamines, glutathione, taurine, thyroid hormones, and serotonin) are required for cell functions. Growing evidence shows that humans and animals have dietary requirements for all proteinogenic AAs. Mammals, birds and fish also have species- and age-dependent needs for some AA-related substances. However, elevated levels of other products (e.g., ammonia, homocysteine, H2S, and asymmetric dimethylarginine) are pathogenic factors for neurological disorders, oxidative stress, and cardiovascular disease. Thus, optimal amounts of AAs and their ratios in diets and circulation are crucial for whole body homeostasis and health. Adequate provision of one or a mixture of functional AAs or metabolites may be beneficial for ameliorating health problems at various stages of the life cycle (e.g., fetal growth restriction, neonatal morbidity and mortality, weaning-associated intestinal dysfunction and wasting syndrome, obesity, diabetes, cardiovascular disease, the metabolic syndrome, and infertility). Dietary supplementation of these nutrients can also optimize the efficiency of metabolic transformations to enhance muscle growth, milk production, and athletic performance, while preventing excess fat deposition and reducing adiposity. Therefore, functional AAs hold great promise in improving the growth, health and well-being of individuals. Book excerpt: In this exciting update, readers will learn how feeding direct-fed microbials (including eubiotics, postbiotics, prebiotics, and synbiotics) is becoming increasingly widespread during food animal production. Animal production must improve efficiency of growth, and the use of direct-fed microbial and prebiotic additives to domestic animals has become widely accepted and utilized. The benefits of probiotic-type approaches in cattle, pigs, fish, and poultry, include improved general animal health, reduced foodborne pathogen populations, increased growth rate and feed efficiency, improved milk and egg production, and have been reported world-wide. Successes from probiotic approaches in multiple species have ensured their adoption; however, several fundamental questions remain. Early establishment and retention of an ecological balance in the gastrointestinal tract is an important first step for an external biological additive to be effective in young animals, suggesting that some of the benefits of direct-fed microbials may be due to an early establishment of a “normal” native gut microbial population. Research has indicated that the establishment of a normal population can enhance gut epithelial integrity, preventing inflammation and improving animal health. Thus, it is important that we understand the key processes that occur during the establishment of the gut microbial population that can impact gastrointestinal fermentation and provide protection against pathogens of the animals and of human consumers. Knowing how these processes work and how they impact animal energy and protein expenditures can guide further improvements of available and future commercial products. Exciting research opportunities are discussed in this book, examining different characteristics of DFMs that are fed to animals to meet different production demands in different production scenarios (e.g., beef versus dairy versus swine versus fin fish). The advent of molecular and next-generation sequencing offers methods of developing tailored DFMs, and of early detection of successful DFM establishment in the gut. These techniques will further deepen our insight into understanding the microbial population of the gut and how these populations impact animal health, food safety, and sustainability of animal-derived protein production.
