Book excerpt: Marketers of food products have recently introduced a variety of "functional foods" that promise consumers improvements in targeted physiological functions. However, despite the proliferation of functional food health claims promising more than basic nutrition, little is known about consumer responses to these claims, particularly in information environments in which inconsistent information may be available about the efficacy of a particular functional ingredient. Across two studies, the authors demonstrate that consumers with lower health consciousness are particularly sensitive to conflicting information about the validity of a functional food health claim; specifically, the presentation of conflicting (versus complementary) information significantly lowers their likelihood of choosing a functional over a nonfunctional food. In contrast, consumers with higher health consciousness do not reduce their likelihood of choosing a functional food when confronted with conflicting information. The authors demonstrate that this effect is driven by a confirmatory bias to believe the functional food health claim on the part of more health conscious consumers. The authors discuss implications for the successful marketing of functional foods and for public policy makers and consumers.

Book excerpt: Health-related information is increasingly used on food products to convey their benefits. Health claims as a subcategory of these messages link the beneficial component, functions or health outcomes with specific products. For consumers, health claims seem to carry the message of increased healthiness, but not necessarily making the product more appealing. The wording of the claim seems to have little impact on claim perception, yet the health image of carrier products is important. From consumer-related factors the relevance and attitudes towards functional foods play a role, whereas socio-demographic factors have only minor impact and the impact seems to be case-dependent. Familiarity with claims and functional foods increase perceived healthiness and acceptance of these products. Apparently consumers make rather rational interpretations of claims and their benefits when forced to assess the information, but we still know relatively little about consumer understanding of the message content in claims and even less about the assessment of personal relevance of the claimed benefits. In future studies more emphasis should be put on including contextual influences and realistic conditions in assessing consumer understanding and use of health claims in purchase decisions.

There is an increasing number of studies dealing with consumers' perception of health claims and their understanding all of which have considered different factors influencing consumers' responses. However none of these studies has considered the possible impact of the food label's context factors such as brand, colour, image or the 'bio' sign. The aim of the present study is to determine whether such factors in combination with other possible influential sources of information which are not part of the food label like mass media influence the level of understanding of health claims and the way consumers perceive them. RESEARCH DESIGN AND METHODS: 480 respondents from Germany participated in the study. Margarine spread bearing a health claim of a less popular functional ingredient was presented to the participants who were divided into 16 groups (N=30 per group) and each group was presented with a different version of the product based on the variations in the levels of the chosen food label's context factor stimuli. Consumers‟ attitudes towards the health claim were measured as well as the level of their understanding of the claim. A repeated measures factor was also used by giving the respondents to read a newspaper article explaining the benefits of the functional ingredient after which their attitude and understanding were re-evaluated. RESULTS: The newspaper article proved to be substantially determining factor both with respect to positively influencing consumers' attitudes and as a risk factor in their understanding of the claim. The presence of 'bio' sign on the product's label together with a darker colour were also found to have a significant positive influence on consumers' perceived credibility of the health claim. The results also showed that when the bio product was from a famous brand it increased the risk of misunderstanding of the health claim. Additionally, the usage of bright colour and famous brand together as well as bright colour and image in combination were also shown to represent a factor which decreased the probability of misunderstanding.

Book excerpt: Abstract: Functional foods have received increasing attention from consumers and food producers and manufacturers over the past years, yet few studies have examined economic and marketing issues that are related to foods with additional health benefits beyond basic nutrients. This dissertation consists of three papers that employ different techniques to understand consumer behavior in this domain. The first essay applies a choice experiment to examine consumer valuation of various attributes of functional foods, using a statewide mail survey. Results indicate that consumers place positive value on health benefits and ingredient naturalness. Moreover, they are willing to pay higher prices for products having these attributes. The data also reveal that taste preferences tend to vary across consumers. Individual characteristics that tend to affect preferences include age, education, and income level. Past purchase behavior for functional foods, organic foods, and natural foods also has significant influence on preferences. The second essay uses the Elaboration Likelihood Model as a theoretical framework to understand the role of health claims in consumer assessment of products. Previous research and theory related to the role of health claims in persuasive messages has portrayed health claims as having little effect on consumers' attitudes. The present research, however, suggests this conclusion may be premature. A new conceptualization of the role of health claims in persuasion is proposed. Practical significance of the laboratory studies is discussed in light of recent changes in product design as well as changes in FDA rules regarding label claims. The third essay focuses on the Food and Drug Administration (FDA)'s recently amended policy on food labeling. This policy allows different qualified levels of health claims on product labels, based on the strength of scientific evidence supporting the claims. This essay examines whether consumers understand and can differentiate between these qualified health claims. Results show that people do not perceive significant differences between the different levels of qualified claims. An additional experiment suggests that a visual aid may be an important device to help consumers understand the scientific basis supporting a claim.
