The life of a livestock trader and herder in the nineteenth century was not easy; dangers abounded in lands which were newly charted. Organizing an efficient and profitable business in such conditions was no easy feat; ranchers had to be physically tough and determined, as well as capable with overseeing and operating a farm. The frequent threat of cattle theft - a common occurrence in the frontier lands - meant security was an added concern. We also receive a history of Kansas, whereby we learn of the state's steady development. The growth of the population, the establishment of banks and storefronts, and the arrival of the railroads were all landmarks of progress in McCoy's home state.

It had its antecedents in the upper South, the Midwest, and the Ohio Valley, where many Texas cattlemen learned their trade. In this book Mr. Henlein tells the story of the cattle kingdom of the Ohio Valley—a kingdom which encompassed the Bluegrass region in Kentucky and the valleys of the Scioto, Miami, Wabash, and Sangamon in Ohio, Indiana, and Illinois. The book begins with the settlement of the Ohio Valley, by emigration from the South and East, in the latter part of the eighteenth century; it ends with the westward movement of the cattlemen, this time to Missouri and the plains, toward the end of the nineteenth century. Mr. Henlein describes the intricate pattern of agricultural activities which grew into a successful system of producing and marketing cattle; the energetic upbreeding and extensive importations which created the great blooded herds of the Ohio Valley; and the relations of the cattlemen with the major cattle markets. An interesting part of this story is the chapter which tells how the cattlemen of the Ohio Valley, between 1805 and 1855, drove their fat cattle over the mountains to the eastern markets, and how these long drives, like the more famous Texas drives of a later day, disappeared with the advent of the railroads. This well-documented study is an important contribution to the history of American agriculture.

The creation of native cattle cultures, represented by the Indian vaquero and the Hawaiian paniolo, demonstrates that California Indians and native Hawaiians adapted in ways that allowed them to harvest the opportunities for wealth that these unfamiliar biological resources presented. But the imposition of new property laws limited these indigenous responses, and Pacific cattle frontiers ultimately became the driving force behind Euro-American political and commercial domination, under which native residents lost land and sovereignty and faced demographic collapse. The beef industry story provides lessons for other agri-food industries attempting to respond to rapidly evolving food markets. The book provides important insights into the process whereby industries respond to a rapidly changing marketplace and, in particular, industries with complex supply chains consisting of many actors. The agri-food industry provides an excellent example of a market that is evolving rapidly in ways few would have contemplated even a few years ago. The beef industry has an exceedingly complex supply chains that must co-ordinate complex resources such as genetics, extensive grazing, precision feeding strategies, high tech processing, cold chain logistics and food safety protocols. The interaction between changing demands and the beef industry's responses to an evolving marketplace provide the focus of the book. The book examines the process whereby the beef industry prior is making the transition from a supplier of commodities to a provider of differentiated products with attributes tailored to individual consumers. The book then provides a theoretical basis for the examination of evolving supply chains and a means by which the industry's response can be assessed using modern quantitative methods. Case studies are developed to dig deeper into the transition the beef industry is experiencing. Insights are drawn for other agri-food sectors facing similar challenges. Ranchers have always had a special place in the cultural heritage that defines North Americans and beef has been the premium product in the dietary hierarchy in traditional North American cuisine. As urban dwellers who are generations removed from agricultural production now overwhelmingly make up the consumer base, the image of cattle producers is buffeted by new customer priorities such as animal welfare, environmental sustainability and the ability to determine the place of origin of their food. As the proportion of food consumed at home declines and consumers seek to expand their range of culinary experiences, food from cultures where beef is not a mainstay of the diet have gained more prominence. These restaurant experiences are increasingly being reflected in the near table ready products on offer in supermarkets. Consumers are still likely to enjoy a good steak, other traditional beef products now struggle for consumers. The implications of the response of the beef industry to the changes buffeting the sector goes beyond strictly commercial concerns and will determine the place of beef and the industry's participants in the evolving North American culture.

That land became the XIT Ranch, briefly one of the most productive cattle operations in the West. The story behind the legendary XIT Ranch, told in full in this book, is a tale of Gilded Age business and politics at the very foundation of the American cattle industry. The capitol construction project, along with the acres that would become XIT, went to an Illinois syndicate led by men influential in politics and business. Unable to sell the land, the Illinois group, backed by British capital, turned to cattle ranching to satisfy investors. In tracing their efforts, which expanded to include a satellite ranch in Montana, historian Michael M.
