Since its introduction into Africa in the 16th century, cassava has spread throughout sub-Saharan Africa to become one of the dominant starchy staples in the diet of the people. Cassava is a major staple for about half of the Nigerian population and nearly 50 million tonnes of fresh cassava is produced annually in the country. This quantity is enough to meet the calorie requirement of 50 million people at about 200 calories per day. Cassava is important not just as a subsistence or food security crop, but also as a main source of cash income for producing households. Its production and processing provide employment and income for the rural poor, especially women and children. This book discusses the environmental impact cassava may have; the functional and nutritional characterization of cassava flour; cassava bread; other food products developed from using cassava roots and its derivatives; and cassava varieties and their breeding status.

The other major staples are cassava, sweetpotato and yam. Together they occupy about 50 million hectares, with production at 640 million metric tons, of which 70% is in developing countries. In total there are more than 30 species of Root and Tuber Crops grown in the world today. Given the content of other volumes in the series, it makes sense to include sugar and fodder beets; swedes and turnips; and minor root and tuber crops so that the book series is as complete as possible. Like the other volumes in the series, this one will present information on the latest in applied plant breeding using the current advances in the field, from an efficient use of genetic resources to the impact of biotechnology in plant breeding. Seven crop specific chapters are proposed, together with an introduction to this diverse set of plant species. Outstanding scientists for each crop species are proposed as senior authors, who may invite co-authors to contribute part of a chapter. In order to increase the overall acceptance of the volume, balance will be sought with authors from different research groups/countries who will be asked to contribute and collaborate where appropriate. The book should be of interest to researchers in both academic and industrial settings, and in both developed and developing countries, as well as students and teachers of plant breeding. At the same time the results of the research have been quickly applied by commercial plant propagators, agronomists, foresters and horticulturists (see the chapter by Kovar and Kuchenbuch, by Ritchie, and by Davies and coworkers in this volume). In an era when there is great interest in speeding technology transfer, the experiences gained in research in adventitious root formation may provide useful examples for other areas of science. Interaction between the fundamental and the applied have been and continue to be facilitated by the establishment, in 1951, of the Plant Propagators' Society, which has evolved into the International Plant Propagators' Society, with active programs in six regions around the world. It is a unique organization which brings together researchers in universities, botanical gardens and arboreta, and commercial plant propagators. In this synergistic environment new knowledge is rapidly transferred and new ideas for fundamental research evolve from the presentations and discussions by experienced plant propagators. In the past 50 years, based on research related to the biology of adventitious root formation, advances in plant propagation have been made on two major fronts.
