Some of the pro ducts thus produced may then react with other compounds pres ent in the milk so that the resulting changes may be and are extremely complicated and difficult to follow even by a chemist. The souring of milk is an example Of the best known and simp lest change that takes place as a result of bacterial growth. In this case certain types Of bacteria break up the milk-sugar into lactic acid (which gives sour milk its sour taste), and carbon dioxide. The lactic acid formed reacts with the casein of the milk, changing it chemically SO that it becomes insoluble and the milk thickens and is said to lopper. Book excerpt: Excerpt from Classification of Dairy Bacteria It will manifestly require many years before a complete knowledge of dairy bacteria can be obtained. While we have in the following pages described about one hundred and sixty types, we recognize that this is by no means the Complete list of even common forms; but to complete the list will require many years of laborious study. When we recognize the extreme variability of bacteria types, especially in physiological charac ters'upon which their classification may be partly based, it be comes evident that to reach an end of the description of dairy forms is almost an impossibility. Our recognized types, as will be shown, vary in all directions and run into each other by more or less complete intermediate links. Every new set of cultures which we obtain from even similar sources show variations in various properties connecting them more or less with other types. This has been forced upon us more and more, as the data we have collected has increased, until we have almost con cluded that the task of arranging these forms into species or even groups is hopeless; for even at the very best these groups will show such wide internal variations as to connect them more or less completely with the closely associated forms. Before such groupings can be finally made an immense amount of work and many years' study must be given. But every attempt to formulate our ideas clears our conceptions, and hence it is thought that the present endeavor to arrange 'the dairy bacteria in a scheme of classification, even though of necessity incomplete and doubtless requiring later changes, will bring us nearer to a proper conception of their relation and help toward a real understanding of problems of bacteriology. Book excerpt: Excerpt from Bacteriology of Milk This is, we believe, the first occasion on which an attempt has been made to deal in a systematic manner with the bacteriology of milk, a subject which is year by year engrossing more of the attention of the public and of the medical profession, on account of the advances which have been made in preventive medicine in general and bacteriology in particular. We commenced the serious work involved in writing the present volume in 1899, and have thus spent, in available time at our disposal, a period of some five years. The length of this period is due in part to the ever-widening field which had to be covered, and in part to unavoidable delays. Whilst this is to be regretted, there is perhaps the advantage that no part of the work has been hastily done. Yet for obvious reasons, the chief of which is the extremely rapid growth of bacteriology, much of the work must be looked upon as provisional only. The conditions affecting bacteria in nature, the potentiality of bacteria in butter and cheese making, and the species of bacteria belonging to milk are subjects still requiring much more investigation than they have hitherto received. The practical and applied aspect of the bacteriology of milk also claims much fuller inquiry. For instance, comparatively little is known of the relationship between disease in the cow and its transmission to man by means of milk. Questions of preventive medicine and of the control of the milk supply are also still open to revision. We are under no illusion as to finality or completeness in this volume.
