Book excerpt: The increased demand for poultry meat and the shift toward portioned and further processed products has been accompanied by genetic improvement and progress in nutrition and management to increase growth rates and improve feed efficiency. Animal protein continues to be the most demanded and expensive protein source worldwide. Poultry is an animal protein commonly accepted among different faith groups and relatively more affordable than other animal protein sources. In addition, poultry meat has lower fat, cholesterol, and sodium content compared to red meat. This review aims at summarizing the available information about skeletal muscle structure, conversion of muscle to meat and how it affects poultry meat quality, the different myopathies historically been identified and other emerging myopathies, then discussing how meat quality affects consumer perception and consumption trends, and finally discussing few of the proposed solutions to overcome the issues of decreased meat quality, including nutritional strategies.

In the poultry industry, the breast is one of the noble parts and, therefore, a lot has been studied about the occurrences, alterations and/or different myopathies that alter its quality characteristics. Here we will highlight White striping (WS) and Wooden breast (WB), both investigated more recently due to changes in quality characteristics and considerable losses. The objectives of this review will be to discuss the biochemical parameters of these meats affected by myopathies WS and WB and their consequences on the development of skin, bone and intestinal microbiota lesions; correlate with the impacts of these occurrences to economic losses associated with partial and total condemnations of the carcasses. Another approach is that fast-growing animals have a drop in their quality of life, impacting the well-being of birds since the inflammatory process and excess weight have a direct correlation with dermatitis, corns, arthritis and other comorbidities.

Two experiments were conducted to evaluate effects of white striping and woody breast hardness on meat quality traits in broiler breast fillets. Birds were processed at 8 wk (Exp.1) and at 6 and 9 wk of age (Exp.2), whereas deboning was carried out at 4 and 2 h postmortem in Exp.1 and 2, respectively. Fillets were categorized as: normal for both white striping and woody breast (NORM); mild for white striping and woody breast (MILD); severe for white striping and mild for woody breast (WS); severe for woody breast and mild for white striping (WB); or severe for both white striping and woody breast (BOTH). Sarcomere length, gravimetric fragmentation index (GFI; Exp.1 only), marination uptake, cook loss, and Meullenet-Owens razor shear energy (MORSE) values on non-marinated and marinated fillets were assessed.
