Available in PDF, EPUB and Kindle. Book excerpt: Until relatively recently, milk was valued mainly for its fat content. Although their importance in milk products has decreased, milk lipids have many interesting, even unique, functional and organoleptic properties and are still the subject of considerable research. This is a comprehensive book covering the chemical, physical and rheological properties of milk lipids, their status as an emulsion in milk and milk products, their biosynthesis, chemical stability, nutritional aspects and their role in consumer acceptability of dairy products.

Download or read book Clay Microstructure written by Richard Bennett and published by Springer Science & Business Media. This book was released on 2012-12-06 with total page 163 pages. Available in PDF, EPUB and Kindle. Book excerpt: Plan of Review This review of clay microstructure is aimed at the diverse group of professionals who share an interest in the properties of fine-grained minerals in sediments. During the last several decades, members of this group have included geologists, soil scientists, soil engineers, engineering geologists, and ceramics scientists. More recently, it has included significant numbers of marine geologists and other engineers. Each of the disciplines has developed special techniques for investigating properties of clay sediments that have proven to be fruitful in answering questions of central interest. Knowledge of clay microstructure-the fabric of a sediment and the physico chemical interactions between its components-is fundamental to all these disciplines (Mitchell 1956; Lambe 1958a; Foster and De 1971). Clay fabric refers to the spatial distribution, orientations, and particle-to-particle relations of the solid particles (generally those less than 3. 9 /Lm in size) of sediment. Physico-chemical interac tions are expressions of the forces between the particles. In this review, we trace the historical development of under standing clay microstructure by discussing key scientific papers published before 1986 on physico-chemical interactions in fine grained sediments and on clay fabric. Since the development follows an intricate path, the current view of clay microstructure is summarized. This summary includes a discussion of the present state of knowledge, the observations made so far, and the facts that are now established.

Download or read book Emulsions written by Alexandru Grumezescu and published by Academic Press. This book was released on 2016-06-13 with total page 770 pages. Available in PDF, EPUB and Kindle. Book excerpt: Emulsions, the third volume of the Nanotechnology in the Food Industry series, is an invaluable resource for anyone in the food industry who needs the most recent information about scientific advances in nanotechnology on this topic. This volume focuses on basic and advanced knowledge about nanoemulsion, and presents an overview of the production methods, materials (solvents, emulsifiers, and functional ingredients), and current analytical techniques that can be used for the identification and characterization of nanoemulsions. The book also discusses the applications of nanoemulsion with special emphasis on systems suitable for utilization within the food industry. This book is useful to a wide audience of food science research professionals and students who are doing research in this field, as well as others interested in recent nanotechnological progress worldwide. - Presents fundamentals of nanoemulsions, methods of preparation (high-energy and low-energy techniques), and applications in the food industry - Includes research studies of nanoemulsification technology to improve bioavailability of food ingredients and research analysis - Offers benefits and methods of risk assessment to ensure food safety - Presents cutting-edge encapsulating systems to improve the quality of functional compounds - Provides a variety of methods, such as high-shear stirring, high-pressure homogenizers, self-emulsification, phase transitions and phase-inversion, to further research in this field
Download or read book Intermolecular and Surface Forces written by Jacob N. Israelachvili and published by Academic Press. This book was released on 2010-12-02 with total page 706 pages. Available in PDF, EPUB and Kindle. Book excerpt: This reference describes the role of various intermolecular and interparticle forces in determining the properties of simple systems such as gases, liquids and solids, with a special focus on more complex colloidal, polymeric and biological systems. The book provides a thorough foundation in theories and concepts of intermolecular forces, allowing researchers and students to recognize which forces are important in any particular system, as well as how to control these forces. This third edition is expanded into three sections and contains five new chapters over the previous edition. - Starts from the basics and builds up to more complex systems - Covers all aspects of intermolecular and interparticle forces both at the fundamental and applied levels - Multidisciplinary approach: bringing together and unifying phenomena from different fields - This new edition has an expanded Part III and new chapters on non-equilibrium (dynamic) interactions, and tribology (friction forces)
