Book excerpt: Excerpt from An Economic Study of Cheese Consumption in Certain Urban and Rural Districts of Canada In this bulletin the results Of a study of cheese consumption in certain sec tions of Canada are presented. Significant variations, which app-ear to be related to differences in location, income, nationality and other factors, are indicated. The project was conducted by the Economics Division of the Mar keting Service, Dominion Department of Agriculture. The Rural Economics Service of the Quebec Department of Agriculture assisted in that part of the study conducted in the province of Quebec. Up to a few years ago marketing research gave greater emphasis to the study of the supply than of the demand Side of the market. In such an approach the market economist had to assume that demand was constant. But this is not the case in actual experience. Changes in demand are Very frequent and this has been particularly true in recent years. Production being the first phase in the life of economic goods, the producer as well as the distributor should make inquiries with respect to the demand for such goods. It will readily be admitted that a sound production program must be based on a full and reliable knowledge of the demand for the product in question. Consequently, improvement in agricultural production depends in a large measure on a sound marketing program which in turn cannot be Obtained without a knowledge of the demand for farm products. The improvement Of the financial position of the dairy farmer in this country calls for a close scrutiny of the methods employed in the production and marketing of dairy pro-ducts. Purpose of the stud y. - T'he study was prompted by the fact that the consumption of cheese in Canada is low when. Compared with that of other countries and that little knowledge existed with respect to the variations: in consumption of different kinds. Of cheese in the various parts. Of Canada. It was felt that more should be known concerning the factors affecting cheese consumption. Among such factors, locality, income, nationality, and taste were considered as likely to be. Important. Since many economists consider the family unit to be the real consuming unit, information was obtained, and is presented on this basis as well as on the usual per capita basis. Book excerpt: Excerpt from The Relation of Bacteria to the Flavors of Cheddar Cheese Before going into a discussion of the experimental work it will be well to mention briefly the changes taking place in ripening cheese, and to review our present knowledge of the causes which produce these changes. By the ripening we do not mean Simply the development of certain desirable flavors. While these are essential, they are only the final result of a long series of complex changes which must take place before the tough, indigestible curd becomes edible; all of these changes are a part of the ripening and must be understood before we can hope to explain or control the production of flavors. In studying the ripening of cheese we have to do with one group of compounds only. The sugar, while it is rapidly broken up and may under cer tain circumstances be connected with certain abnormal fermentations, breaks down most rapidly into comparatively simple acids which have little direct influence on the flavor. On the other hand, many of the decomposition products of fat (which is an important constituent of Cheddar cheese) have an especially pungent odor and taste. How ever, it is well established that the change in the fat is, at most, very slight It is in the nitrogenous constituents - the casein, or, more properly, the paracasein - that we find the important changes. In carrying on the work recorded in this paper the writer has received many valuable suggestions from Mr. Edwin B. Hart, asso ciate chemist at the New York Agricultural Experiment Station. In the manufacture and initial bacteriological examinations of Cheeses IV and V, the bacteriological laboratory and the dairy of the New York Agricultural Experiment Station at Geneva were used. Book excerpt: Updates for many countries have made it possible to estimate hunger in the world with greater accuracy this year. In particular, newly accessible data enabled the revision of the entire series of undernourishment estimates for China back to 2000, resulting in a substantial downward shift of the series of the number of undernourished in the world. Nevertheless, the revision confirms the trend reported in past editions: the number of people affected by hunger globally has been slowly on the rise since 2014. The report also shows that the burden of malnutrition in all its forms continues to be a challenge. There has been some progress for child stunting, low birthweight and exclusive breastfeeding, but at a pace that is still too slow. Childhood overweight is not improving and adult obesity is on the rise in all regions. The report complements the usual assessment of food security and nutrition with projections of what the world may look like in 2030, if trends of the last decade continue. Projections show that the world is not on track to achieve Zero Hunger by 2030 and, despite some progress, most indicators are also not on track to meet global nutrition targets. The food security and nutritional status of the most vulnerable population groups is likely to deteriorate further due to the health and socio economic impacts of the COVID-19 pandemic. The report puts a spotlight on diet quality as a critical link between food security and nutrition. Meeting SDG 2 targets will only be possible if people have enough food to eat and if what they are eating is nutritious and affordable. The report also introduces new analysis of the cost and affordability of healthy diets around the world, by region and in different development contexts. It presents valuations of the health and climate-change costs associated with current food consumption patterns, as well as the potential cost savings if food consumption patterns were to shift towards healthy diets that include sustainability considerations. The report then concludes with a discussion of the policies and strategies to transform food systems to ensure affordable healthy diets, as part of the required efforts to end both hunger and all forms of malnutrition.
