Book excerpt: By providing environmental education to students, we can inspire young minds to appreciate and understand the benefits of preserving our ecosystem. Teaching elementary school students about composting is one way to stimulate these developing minds. Composting is a natural way to conserve food waste, improve soil fertilization, and may lead to decreased air pollution. Institutions, like elementary schools, can play a major role in introducing this subject to students at a young age, which could help in limiting food waste. However, the majority of elementary schools in the La Crosse school district are not teaching composting to students. Many teachers either lack adequate knowledge about composting or have limited time to develop a composting curriculum for their classrooms. In response to this need, this guidebook was developed and intended to help teachers, interns, and volunteers to educate their students about composting. This guidebook was developed from a pilot study (2016) that was completed at the State Road Elementary School, La Crosse, as part of my preceptorship; the study addressed the general concepts of food waste reduction and the environmental benefits of composting.

To better understand how local food reaches the point of sale, Growing Local uses case study methods to rigorously compare local and mainstream supply chains for five products in five metropolitan areas along multiple social, economic, and environmental dimensions, highlighting areas of growth and potential barriers. Growing Local provides a foundation for a better understanding of the characteristics of local food production and emphasizes the realities of operating local food supply chains.
