Hier spielt die Oberflächenbeschaffenheit eine entscheidende Rolle, da der Beginn der Ansatzbildung bis zur kompletten Belegung der Oberfläche und die Ablösung von dem resultierten Belag von der Wechselwirkung zwischen Produkt und Oberfläche beeinflusst wird. Deswegen wurde in Rahmen dieser Arbeit die Effekte der energetischen und topographischen Oberflächeneigenschaften von amorphen kohlenstoffbasierten Beschichtungen (DLC) auf die Belagbildung und Reinigung von Milchkomponenten untersucht. Darüber hinaus wurde die Modellösungszusammensetzung sowie die initialen Oberflächentemperatur und Strömungsverhältnis variiert. Die statistische Betrachtung der Ergebnisse zeigt, dass die Wechselwirkung der variierten Paremetern die Belagsbildung, -zusammensetzung, -struktur und –eigenschaften beeinflusst. Reinigungsprofile waren auch von den Oberflächeneigenschaften abhängig. Optimale Basekomponenten der freien Oberflächenenergie γ - für ein minimales Fouling im Batch und unter kontinuierlichen Strömungsbedingungen sowie für einen minimalen Reinigungsaufwand wurden vorgeschlagen.
