Book excerpt: Handbook of Food Isotherms: Water Sorption Parameters for Food and Food Components is the first English handbook entirely devoted to water vapor sorption data of foods and food components. It contains more than 1,000 isotherms with the mathematical description of over 800 of these isotherms. The water sorption isotherms of foods show the equilibrium relationship between the moisture content of foods and the water activity at constant temperatures and pressures. Composed of three chapters, this book initially discusses the main types of changes in foods affected by water activity. It goes on describing the principal methods of water activity determination, namely, gravimetry, manometry, and hygrometry. Data presented as plots of moisture content versus water activity are given. The last chapter presents several mathematical equations for describing water sorption isotherms of food materials. It emphasizes a statistical analysis on fitting abilities of various two-parameter equations as applied to each experimental isotherm collected. It contains tables of parameters for mathematical description of food isotherms. Supplementary texts on nonlinear regression program used for determination of statistical parameters in this text are also provided.

Book excerpt: Eighty-six oceanographic stations were occupied in the waters between Monterey Bay and San Francisco Bay during the period 7-14 November 1969. Values of beam transmittance, oxygen content, particulate count, and temperatures were obtained from the surface to 100 meters. These parameters were analyzed and compared by means of depth profiles, horizontal contours and vertical contours. The average sea surface temperature during this period was 14.44C. The northern part of Monterey Bay had the lowest values of beam transmittance and highest values of particulate count. The California Current appears to be flowing southward down the coast at depths above 60 meters and entering Monterey Bay where it sinks to a depth of at least 61 meters. Indications of downwelling are present off the coast between Pt. Ano Nuevo and Santa Cruz and this is attributed to the northward flowing Davidson URRENT IMPINGING ON THE SHORE ANDn Current impinging on the shore and sinKING. A layer of maximum particulate count was often found to exist within the thermocline. (Author).

The hydrometeor and radar parameters involved in the AFCRL/SAMS program at Wallops Island, Virginia, are defined and the methods of measurement and correlation are explained. The hydrometeor regions and transition zones of the Wallops Island storms are discussed and the methods of computing the precipitation rate, the liquid-water-content, and the integral of the liquid-water-content along the trajectories of the SAMS missiles fired into the storms are demonstrated. A case example is presented to illustrate the details of the computational procedures. The uncertainties of the liquid-water-content values determined from radar measurements are assessed, to a first approximation. Size distribution information is also presented for the different types of hydrometeors, based on theoretical distribution functions.

Book excerpt: My wife Tatyana, daughter Mariya, son Alexandr It is well known that the mixed-mode conditions appear when the direction of the applied loading does not coincide with the orthogonal K,-Kn-Km space. In general, in the industrial practice the mixed-mode fracture and the mixed-mode crack growth are more likely to be considered the rule than the exception. Miller et al. considers that cracks can grow due to a mixture of processes (ductile and brittle), mechanisms (static, fatigue, creep) and loading modes (tension, torsion, biax ial/multiaxial). Additionally mixed-mode crack-extension can be affected by many other considerations such as artifact geometry (thin plates, thick shells, and the size, shape and orientation of the defect), environmental effects (temperature, gaseous and liquid surroundings), material state (crystallographic structure, heat treatment and route of manufacture) and stress conditions (out-of-phase and ran dom loading effects). The main feature of the mixed-mode fracture is that the crack growth would no longer take place in a self-similar manner and does not follow a universal trajec tory that is it will grow on a curvilinear path. There are various fracture criteria, which predict the behavior of cracks in brittle and ductile materials loaded in combined modes. Linear elastic fracture mechanics (LEFM) criteria predict basi cally the same direction for crack propagation. Cracks in brittle materials have been shown to propagate normal to the maximum tangential stress. In ductile ma terials yielding occurs at the crack tip and LEFM is no longer applicable.
