Book excerpt: Excerpt from Western Poultry Book: Tells You What to Do and How to Do It; The Chicken Business From First to Last; With Questions and Answers Relative to Up-to-Date Poultry Culture In the hope of helping beginners and others of my friends in the poultry business, and in response to urgent requests for a book on poultry culture from my pen, I wrote a small volume three years ago. The whole edition was sold in a year, and on account of the interest taken in it and the demand for something more, I have re-written it and added chapters on breeding in line, fireless brooders and other new features in the poultry business. The book is a synopsis of many chapters of my "Woman's Work in the Poultry Yard" and other talks on poultry, and embodies the personal, practical experiences I have been through myself in many years of pleasant work in the poultry yard. Its object is not necessarily to urge anyone into the business, but to encourage and help beginners and especially newcomers on the Pacific Coast, where conditions differ materially from those in the East and where there is an increasingly large demand for both poultry and eggs; where the poultry business is about as profitable as any that can be undertaken and a good living may be made in the pure air and sunshine by any industrious man or woman. Having for many years been lecturer at the Farmers' Institutes in the Extension Courses of the University of California, for four years instructor in poultry husbandry at the poultry school of the University of California, and having been editor or associate editor of four agricultural and other newspapers on the Pacific Coast, many questions have during this time been compounded to me relating to the poultry business, its difficulties, the troubles of poultry raisers and the ailments of fowls. Some of these questions will be found in this book with the answers to them, also remedies for the diseases or ills of fowls in this climate. Hoping and feeling sure that my little book may prove a help to all its readers, I am, very cordially your friend. Among the hundreds of topics covered include Common Sense Poultry Houses, What Variety to Choose, Eggs For Breeding, Eggs For Market, Sprouting Oats For Feed, Feeding Problems, Sample Rations, Feeding Alfalfa to Poultry, Line Breeding, When to Hatch Chicks, Testing Eggs During Incubation, Natural and Artificial Incubation, Care of Chicks, Selling One Day Old Chicks, Chickens For Broilers, Trap Nests, Grit For Poultry, Pests in the Poultry Yard, Town Lot Poultry, The Molting Season, Preserving Eggs, Capons, Turkeys and How To Raise Them, Ducks and Their Breeds, Geese, Guinea Fowl, Pheasants and much more. Available in PDF, EPUB and Kindle. Book excerpt: From the domestication of the bird nearly ten thousand years ago to its current status as our go-to meat, the history of this seemingly commonplace bird is anything but ordinary. How did chicken achieve the culinary ubiquity it enjoys today? It’s hard to imagine, but there was a point in history, not terribly long ago, that individual people each consumed less than ten pounds of chicken per year. Today, those numbers are strikingly different: we consumer nearly twenty-five times as much chicken as our great-grandparents did. Collectively, Americans devour 73.1 million pounds of chicken in a day, close to 8.6 billion birds per year. How did chicken rise from near-invisibility to being in seemingly "every pot," as per Herbert Hoover's famous promise? Emelyn Rude explores this fascinating phenomenon in Tastes Like Chicken. With meticulous research, Rude details the ascendancy of chicken from its humble origins to its centrality on grocery store shelves and in restaurants and kitchens. Along the way, she reveals startling key points in its history, such as the moment it was first stuffed and roasted by the Romans, how the ancients’ obsession with cockfighting helped the animal reach Western Europe, and how slavery contributed to the ubiquity of fried chicken today. In the spirit of Mark Kurlansky’s Cod and Bee Wilson's Consider the Fork, Tastes Like Chicken is a fascinating, clever, and surprising discourse on one of America’s favorite foods.

Download or read book The Chicken Book written by Page Smith and published by University of Georgia Press. This book was released on 2000 with total page 398 pages. Available in PDF, EPUB and Kindle. Book excerpt: Liberating today's chicken from cartoons, fast food, and other demeaning associations, The Chicken Book at once celebrates and explains this noble fowl. As it traces the rise and fall of Gallus domesticus from the jungles of ancient India to the assembly-line hatcheries sprawled across modern America, this original, frequently astounding book passes along a trove of knowledge and lore about everything from the chicken's biology and behavior to its place in legend and mythology. The book includes lively discussions of the chicken's role in literature and history, the cruel attractions of cockfighting, the medicinal uses of eggs and chicken parts, the details of the egg-laying process, the basics of the backyard coop, recipes, and much more. Entertaining and insightful, The Chicken Book will change the way we regard this too often underappreciated animal.
