Additionally researchers both at universities and in government agencies are facing an increased challenge to develop means of preventing these foodborne illness occurrences. The premise of this book is that when human pathogen contamination of fresh produce occurs, it is extremely difficult to reduce pathogen levels sufficiently to assure microbiological safety with the currently available technologies. A wiser strategy would be to avoid crop production conditions that result in microbial contamination to start. These critical, problem-oriented chapters have been written by researchers active in the areas of food safety and microbial contamination during production, harvesting, packing and fresh-cut processing of horticultural crops, and were designed to provide methods of contamination avoidance. Book excerpt: To trace the effects of cultural eutrophication, one meter sediment cores were used to determine the history of calcareous and noncalcareous Wisconsin lakes. Cores were analyzed for carbon, phosphorus, calcium, magnesium, potassium, aluminum, iron, and manganese. Determinations of organic nitrogen, exchangeable ammonium and acid soluble phosphorus were made on selected sedimentary profiles. Recent sedimentation rates and identification of pre- and postcultural sediments were determined by ragweed pollen. Enrichment of phosphorus in postcultural Lake Mendota, Wisconsin, sediments are the effect of increased phosphorus supply from domestic sewage. Chemical stratigraphy of concentration-depth diagrams permit a qualitative evaluation of cultural activities. Potentialities and limitations of using recent lake sediments to evaluate eutrophication are discussed.
