Available in PDF, EPUB and Kindle. Book excerpt: "The bible for the D.I.Y set: detailed instructions for how to make your own sauerkraut, beer, yogurt and pretty much everything involving microorganisms."--The New York Times *Named a "Best Gift for Gardeners" by New York Magazine The original guide to kraut, kombucha, kimchi, kefir, and kvass; mead, wine, and cider; pickles and relishes; tempeh, koji, miso, sourdough and so much more...! Winner of the James Beard Foundation Book Award for Reference and Scholarship, and a New York Times bestseller, with more than a quarter million copies sold, The Art of Fermentation is the most comprehensive guide to do-it-yourself home fermentation ever published. Sandor Katz presents the concepts and processes behind fermentation in ways that are simple enough to guide a reader through their first experience making sauerkraut or yogurt, and in-depth enough to provide greater understanding and insight for experienced practitioners. While Katz expertly contextualizes fermentation in terms of biological and cultural evolution, health and nutrition, and even economics, this is primarily a compendium of practical information--how the processes work; parameters for safety; techniques for effective preservation; troubleshooting; and more. With two-color illustrations and extended resources, this book provides essential wisdom for cooks, homesteaders, farmers, gleaners, foragers, and food lovers of any kind who want to develop a deeper understanding and appreciation for arguably the oldest form of food preservation, and part of the roots of culture itself. Readers will find detailed information on fermenting vegetables; sugars into alcohol (meads, wines, and ciders); sour tonic beverages; milk; grains and starchy tubers; beers (and other grain-based alcoholic beverages); beans; seeds; nuts; fish; meat; and eggs, as well as growing mold cultures, using fermentation in agriculture, art, and energy production, and considerations for commercial enterprises. Sandor Katz has introduced what will undoubtedly remain a classic in food literature, and is the first--and only--of its kind.

Book He is a Glutton and a Drunkard Deviant Consumption in the Hebrew Bible

Download or read book He is a Glutton and a Drunkard Deviant Consumption in the Hebrew Bible written by Rebekah Welton and published by BRILL. This book was released on 2020-02-17 with total page 356 pages. Available in PDF, EPUB and Kindle. Book excerpt: In ‘He is a Glutton and a Drunkard’: Deviant Consumption in the Hebrew Bible Rebekah Welton uses interdisciplinary approaches to explore the social and ritual roles of food and alcohol in Late Bronze Age to Persian-period Syro-Palestine (1550 BCE–400 BCE). This contextual backdrop throws into relief episodes of consumption deemed to be excessive or deviant by biblical writers. Welton emphasises the social networks of the household in which food was entangled, arguing that household animals and ritual foodstuffs were social agents, challenging traditional understandings of sacrifice. For the first time, the accusation of being a ‘glutton and a drunkard’ (Deut 21:18-21) is convincingly re-interpreted in its alimentary and socio-ritual contexts.

Book Alcohol and Pleasure

Download or read book Alcohol and Pleasure written by Stanton Peele and published by Routledge. This book was released on 2013-05-13 with total page 415 pages. Available in PDF, EPUB and Kindle. Book excerpt: There is no simple threshold between the experience of drinking and the pleasure it can bring on the one hand and the pain and suffering caused by alcohol abuse on the other. But if we are to understand the role of alcohol in society, then at the very least we need to acknowledge the pleasure as well as the pain. Alcohol and Pleasure aims to bring together existing knowledge on the role of pleasure in drinking and determine whether the concept is useful for scientific understanding and policy consideration.

Book Reproduction and Social Organization in Sub Saharan Africa

Download or read book Reproduction and Social Organization in Sub Saharan Africa written by Ron J. Lesthaeghe and published by Univ of California Press. This book was released on 2023-11-10 with total page 570 pages. Available in PDF, EPUB and Kindle. Book excerpt: Unlike most Asian and Latin American countries, sub-Saharan Africa has seen both an increase in population growth rates and a weakening of traditional patterns of child-spacing since the 1960s. It is tempting to conclude that sub-Saharan countries have simply not reached adequate levels of income, education, and urbanization for a fertility decline to occur. This book argues, however, that such a socioeconomic threshold hypothesis will not provide an adequate basis for comparison. These authors take the view that any reproductive regime is also anchored to a broader pattern of social organization, including the prevailing modes of production, rules of exchange, patterns of religious systems, kinship structure, division of labor, and gender roles. They link the characteristic features of the African reproductive regime with regard to nuptiality, polygyny, breastfeeding, postpartum abstinence, sterility, and child-fostering to other specifically African characteristics of social organization and culture. Substantial attention is paid to the heterogeneity that prevails among sub-Saharan societies and considerable use is made, therefore, of interethnic comparisons. As a result the book goes considerably beyond mere demographic description and builds bridges between demography and anthropology or sociology. Book Commodities and Globalization

Download or read book Commodities and Globalization written by Angelique Haugerud and published by Rowman & Littlefield Publishers. This book was released on 2000-07-05 with total page 260 pages. Available in PDF, EPUB and Kindle. Book excerpt: TodayOs growing fascination with flows of people, commodities, technology, capital, images and ideas across national and other boundaries poses fresh theoretical and methodological challenges to anthropology. Commodities offer a particularly useful window on globalization because they, unlike electronically conveyed capital, transport cultural messages. These ideological or symbolic transfers are of particular interest to economic anthropology. This collection considers how conceptions and roles of commodities may change in response to widening spheres of economic interaction and exchange. The essays in this volume are ordered under two themes. Those included in the first section, OCommodities in a Globalizing Marketplace,O address historically and culturally defined variations in meanings and practices associated with commodities in globalizing markets. In Part Two, OThe Circulation and Revaluation of CommoditiesO, contributors analyze how commodity producersO experiences are informed by colonial and post-colonial history, state directives in the marketplace, and locations in dependent or marginalized regions. The chapters all focus on the production process as it responds to, is distorted by and increasingly is controlled by the determination of the value of those commodities outside a OlocalityO.
