Book excerpt: Background: Fruit and vegetable (F&V) intake in preschool-aged children remains below recommendations. As the environment can affect food consumption, this study tested the effects of two environmental factors, dietary variety and course sequence, on fruit and overall intake of a snack in preschool-aged children. Methods: Using a 2 x 2 x 2 design (between-subjects factor of order and the within-subjects factors of dietary variety and courses), 16 children (4.1 ± 0.7 years of age, 56.3% female, 75.0% White, 93.8% non-Hispanic or Latino, and 0.5 ± 1.3 BMI z-score) from 2 preschool classrooms (classroom 1 [n = 7] and classroom 2 [n = 9]) completed 20 minute snack sessions on Wednesday afternoons over four occasions. All snacks were 200g and included 50g of applesauce, 50g of peaches, and 100g of cheese (variety) or 100g of applesauce, and 100g of cheese (no-variety), served over one 20-minute course (one-course) or one, 10-minute fruit course and one 10-minute cheese course (two-course). Results: Repeated measures analyses of covariance found no significant main effects or interactions of fruit or overall snack intake. Conclusion: Variety and course sequence may not be an effective strategy to increase low-energy dense foods, like F&Vs, during snacks in preschool-aged children.

Book excerpt: ABSTRACT Background: Obesity in the United States has become a major health issue, affecting not only adults, but children as well. The increase among preschool children is of major concern, with 2 out of 10 children in 2008 being overweight or obese. It is important to start obesity prevention at a young age in order to avoid the development of obesity and its detrimental health conditions. Children begin to develop eating habits at a young age, and the home eating environment may have an influence on the development of eating habits. Purpose: To assess the influence of both a positive and negative home eating environment on preschoolers' intake of fruits and vegetables and snack foods. Setting: A cooperative preschool in metropolitan Seattle, WA. Subjects: Families with children aged 12 months to 5 years (n= 163) were contacted and asked to participate. One hundred and forty-two surveys were distributed and 75 responses were obtained. Research Design: Quantitative study. Data Collection and Analysis: A survey with questions based on a Likert scale was designed specifically for this study. A score for fruit and vegetable intake (FV), snack foods intake (SF), positive home environment (HE), and negative home environment was calculated for each individual. Pearson's product-moment correlations, individual samples t-test analyses, ANOVA, and frequencies of behaviors were calculated. Findings: A Pearson product-moment correlation revealed significant and non-significant correlations. There was a negative correlation, but not significant, between HE score and FV intake [r = -.199, n =69, p = .102], where the more negative HE factors that were present in the household, the fewer FV were consumed. There was a positive correlation, but not significant, between HE score and SF intake [r = .191, n =70, p = .113]. There was a statistically significant correlation (pd"01) between FV availability and FV intake [r = .323, n =75, p = .005]. There was a statistically significant correlation (pd"05) between the SF availability and SF intake [r = .246, n =73, p = .036]. There was a statistically significant correlation (pd"01) between SF intake and FV intake [r=.333, n=73, p=.004]. An independent-samples t-test revealed a significant difference (pd"01) in scores of FV availability for positive HE (M=0.54±0.08) versus negative HE (M=0.45±0.09); t(69)=3.99, pd"00. These results suggest that there is more FV availability in positive HE. Conclusion: These findings suggest that the home eating environment does have an influence on the dietary intake of FV and SF of preschoolers, where a positive HE correlates with higher availability of FV and increased intake by preschoolers, and a negative HE correlates with a higher availability of SF and increased intake of these foods by preschoolers.

(1998) demonstrated that fifteen consecutive days of dietary intake was necessary to capture dietary variety. The objective of this study was to determine if these same findings hold true for children. The subjects included children aged 11to 12 (n=33). A registered dietitian collected fourteen consecutive days of dietary data using the 24-recall method. A variety score was derived by counting total number of different foods consumed from the fruit, vegetable, grain, dairy, and meat groups (FVGDM) according to the USDA's Healthy Eating Index protocol. Another score using the fruit, vegetable, and grain (FVG) groups was also calculated. Nutrient intakes were estimated using Nutritionist V software. Analysis of variance was used to test the difference between the mean values of the variety scores at days three, seven, and fourteen. Pearson correlation analysis was conducted between the FVGDM and FVG variety scores and mean nutrient intakes. Results of the analysis of variance for variety scores at days three, seven, and fourteen showed a significant difference (p).0001) between the mean FVGDM scores (mean scores = 12.2, 17.9, 22.6) and FVG scores (mean scores = 7.0, 10.2, 12.9, respectively). Both variety scores were positively correlated (p= p).05) with Vitamin C (r = +.47, +.43) and fiber (r = +.73, +.48). In this sample of children, variety increased as a function of time and differed significantly at days three, seven, and fourteen. It appears that three and seven days of dietary intake may not be adequate to assess variety in children.

Book excerpt: Parenting research indicates that the quality of parenting practices is associated with children's developmental outcomes. However, the quality of parenting practices within the feeding context remains understudied, inconsistent, and nuanced. Less is known about children's influence on the quality of these parent-child interactions. Given parents' influence during the preschool years, the current study examined the bidirectional influence of low-income mothers' parenting quality and difficult child behaviors concerning preschool-aged children's weight and dietary intake. Among a sample of 102 parent-child dyads, the concurrent study found that parents who used warm/responsive controlling food parenting practices (FPPs) resulted in children with a better diet, but not weight, than their counterparts. The study also found that parents who used more controlling FPPs in response to difficult child behaviors had children with a lower weight status, but not diet, compared to parents who used controlling FPPs out of the context of children's difficult behaviors. These findings suggest that the context in which practices are expressed (i.e., feeding) and child characteristics (i.e., difficult behaviors) provide a deeper understanding between parenting quality and child outcomes.

There is a wide range of dietary assessment methods available to measure food and nutrient intakes (expressed as energy insufficiency, diet quality and food patterns etc.) in diet and nutrition surveys, in impact surveys, and in monitoring and evaluation. Differenct indicators can be selected according to a study's objectives, sample population, costs and required precision. In low capacity settings, a number of other issues should be considered (e.g. availability of food composition tables, cultural and community specific issues, such as intra-household distribution of foods and eating from shared plates, etc.). This manual aims to signpost for the users the best way to measure food and nutrient intakes and to enhance their understanding of the key features, strengths and limitations of various methods.
