Book excerpt: Focus has been put on healthy eating habits within the last few years due to an increase in obesity and other chronic diseases. Eating habits are formed at an early age, but nutrition education curriculum is not mandated in Wisconsin. Studies have shown a relationship between nutrition knowledge and self-efficacy, but little research exists on coupling nutrition education with nutrition exposure on the effect of nutrition knowledge and self-efficacy. The sample for this study was 11 third through fifth grade students at Starr Elementary in New Richmond, Wisconsin and was self-selecting. Three lessons were implemented using USDA's Serving Up MyPlate curriculum and preparation of a healthy snack in a before-school setting. Change was measured with a pre-/post-test evaluation based on lesson objectives and research questions. It was found that intervention provided change in student knowledge on nutrition and health outcomes, an increase in overall nutrition knowledge, improvements in identifying foods as nutrient dense vs. non-nutrient dense, and an increase in nutritional self-efficacy. Further research needs to be conducted with a larger, randomized sample and more lessons to determine the impact this type of education can provide.

Book excerpt: The self-efficacy construct has been determined to be an effective method of stimulating desired eating behavior in diabetics and obese adults and exercise behaviors in pulmonary rehabilitation patients. Although the self-efficacy construct has been shown to mediate eating habits, practical classroom application of the construct has been rarely used in this area. A review of literature indicated that no studies have been reported on the effect of self-efficacy on food-related behaviors of children. The primary purpose of this research was to determine if, and to what extent, self-efficacy predicts changes in food choices of fifth-grade children. The effect of self-perceptions of competence on the nutrition knowledge of children after a nutrition education intervention program was also assessed. Forty-five fifth-grade children in two classrooms participated in this study. Their self-perception profile, food choices, nutrition knowledge, and food acceptance were measured both before and after the nutrition education unit. A 25 item nutrition knowledge questionnaire was also administered to the children before and after the nutrition education program. Change in knowledge in the cognitive domain was measured by differences in scores on the nutrition knowledge pretest and posttest. Students kept five-day food records for the school lunch items consumed. The fruit and vegetable intakes of the students were estimated from these food records. Chi-square analyses were performed on the data to determine the relationship between self-efficacy as the independent variable and change in food choices, and food acceptance and change in nutrition knowledge as the dependent variables. The 3 x 3 contingency tables indicated that there were no significant relationships between selfefficacy and change in food choices, food acceptance and nutrition knowledge. The findings provide limited support for the usefulness of the self-efficacy construct in understanding and predicting eating behavior change. It is recommended that further investigations of the predictive capability of the self-efficacy expectancy be conducted in children of this age group to better understand its relationship with food choices and implications for nutrition education for school children.

Book excerpt: Childhood obesity rates have dramatically increased since the 1980's. This has become major public health concern because children who are overweight or obese are more likely to have obesity-related health issues and are more likely to be overweight or obese as adults. Obesity is also associated with poor dietary habits. Currently, children have dietary patterns that are low in fruits, vegetables, and whole grains. In addition, many Americans lack the knowledge on how to prepare healthful meals and because of this there is a lack of a meal preparation knowledge being transferred to children. To help address these issues it has been suggested that there is a need to teach youth not only nutrition knowledge but also basic cooking skills. The objective of this study was to examine the impact of a 12-week afterschool cooking and nutrition club on youth nutrition knowledge, eating behavior and self-efficacy, and cooking attitude and self-efficacy among 4th and 5th grade students attending two Title I elementary schools. A secondary objective was to evaluate the novel healthy plate photo to assess youths' nutrition knowledge. After participating in the WeCook program, 84.1% of youth reported they really liked to cook and 56% reported they could read a recipe by themselves. Youth significantly increased their knowledge about why breakfast is important and healthy snack options. At post-intervention there was a significant increase in the healthy plate photo scores from pre- to post-intervention with 55.1% of youth scoring the maximum score. Finally, mixed results were seen for healthy eating behaviors and self-efficacy. Further research is needed to understand the effects cooking and nutrition programs have on youth participants related to nutrition knowledge, healthy eating behaviors and self-efficacy, and cooking attitude and self-efficacy.

Book excerpt: Due to the great increase of childhood obesity cases in the U.S. over the past 30 years, the critical need to achieve healthy eating habits and gain sufficient nutritional knowledge has been raised. Overweight and obese children are at risk for developing medical problems that affect their present and future health, as well as overall quality of life. As children continue to grow in a world fueled by various factors that affect their dietary intake, they lack nutritional knowledge and begin to assume that unhealthy eating behaviors are the norm. The continuance of such behaviors lead children to face the same chronic diseases and health issues that overweight and obese adults face. If sedentary behavior, followed by unhealthy eating and a deficit in nutritional knowledge continues, it can be predicted that today's children will keep facing an obesity epidemic and its health-related consequences. With the daily participation of over 40 million children in the School Breakfast Program and National School Lunch Program, schools have the ability to promote the consumption of nutritious foods and teach the importance of physical activity (Clark & Fox, 2009). Though the state of Ohio requires that health education (focusing on the nutritive value of foods, the relation of nutrition to health, and the use and effects of food additives) be incorporated into school curriculum, there have been financial and time restraints on nutrition education because of the intense pressure for schools to raise standardized testing scores ("State School Healthy Policy Database: Health Education", 2008). Teachers must incorporate nutrition into their curriculum even without having the background knowledge on whether to decide what information is important or accurate. Discovering that over nine million U.S. children were overweight in 2006 helps to mentally grasp the growing problem of childhood obesity, as well as how children lack valuable knowledge about nutrition and proper dietary intake. An extensive review of literature will be conducted to help solidify the need for preventative measures against factors that negatively affect the nutritional knowledge and dietary intake of children. The lessons of READY, SET, LEARN will give students an in-depth look into the importance of having a balanced diet and understanding exactly why it is needed.

Book excerpt: Schools are an attractive entry point to improve children’s diets, as their eating habits can be shaped during childhood and the information disseminated from school can reach adults through children. We implemented a cluster-randomized trial in 12 schools in peri-urban Viet Nam to assess if two school-based interventions increased knowledge of healthy diets among children and their parents, as well as children’s consumption of healthy foods. First, children were given lessons about food before school lunch and encouraged to share the lessons with their parents. Second, children were provided with healthy snacks for five weeks to reinforce messages about healthy eating. We found that in the short term, the nutrition lessons raised the knowledge index score of the children by 0.35 standard deviation. After six months, this intervention retained its effectiveness only for the children who also received free access to fruit, emphasizing the linkage between knowledge and practice. By itself, free access to fruit at school increased the children’s daily fruit consumption by half a portion, but not at the expense of home fruit consumption. Access to healthy foods at school can therefore be an effective measure to raise children’s healthy consumption. Child-parent communication was not a reliable channel for knowledge dissemination in our setting.
