Oak derived volatiles are important contributors to the overall aroma of such wines. The extent of toasting by commercial cooperages impacts the volatile composition of barrels which in turn affects the volatile composition of the wine. The goal of this study was to investigate the sources of variation in the toasting process to identify processing steps which are critical to achieve consistent results from the barrel making process.The first section of this study focused on the bending and toasting processes at a commercial cooperage, in which the unfinished barrels are heated over a wood fire until the staves can be bent readily. After bending, the barrels are further heated over additional wood fires to achieve the desired toasting level. In this study, wireless thermocouples were imbedded in staves to assess the variability in the temperature experienced by the staves during the bending and toasting process. Samples of the wood around the thermocouples were analyzed by GC-MS/MS to assess the impact of heating on the volatile composition of the wood. The temperature profiling demonstrated that the wood received differing amounts of heat depending on proximity to the flames as well as the distance from the firepot itself. Varying chemical profiles resulted from the differential heating; depending in part on the origin of the volatiles, different patterns of formation and/or degradation were observed. This study demonstrated that the range in maximum temperature achieved during a production run of barrels can be as large as 30°C. The variability in volatile composition of barrels during a production run was related to the variability in temperature profiles. This study also documented the variability associated with the individual coopers managing the toasting process. As a visual demonstration of the effects of variability in the toasting process, a series of "maps" of the volatile composition of every stave in a single barrel was produced.The second section of this study evaluated the relative impact of forest of origin and grain tightness of wood on the resulting chemical and sensory properties of the wine aged in the study barrels. Oak stave wood from the Allier, Nevers and Vosges forests was selected for grain tightness. Four barrels of each combination of forest and grain were made using a consistent barrel making protocol. The barrels were filled with Chardonnay juice from a single vineyard; after barrel fermentation and 8 months of aging, the wines were sampled, filtered and bottled. The wines were analyzed using GC-MS/MS for oak related volatile compounds; the wines were also analyzed for their polyphenol levels using a spectrophotometric assay. The wines were evaluated using a sensory technique known as Projective Mapping, first by a panel of experts and then by a panel of students. It was possible using the chemical analyses to differentiate amongst some, but not all, combinations of forest and/or grain tightness. Neither the expert panel nor the student panel was able to find sensory differences amongst the combinations of forest and grain tightness, although a subset of the most experienced expert tasters performed somewhat better than the panel as a whole. The differences that may have been present due to forest of origin or grain tightness were relatively small compared to the variability in volatile composition resulting from the toasting process.

The first was designed to explore the extraction of oak compounds, and their resulting sensory and chemical impacts on Chardonnay wine body. Eight barrels of various toast levels and oak origin were used to ferment and age a Chardonnay wine. A ninth neutral barrel was included as a control. The barrel toast profile wines were found to be significantly different chemically and sensorially with respect to volatile aromas and taste attributes, but the wines did not differ in the perceptions of perceived viscosity, mouth coating, or prickle feeling. Under the conditions studied the various toast profiles did not alter wine body. The second part was designed to test if oak extraction from oak alternatives altered the measured physical viscosity in a model wine. Under the studied conditions of three weeks contact, oak extraction did not alter measured viscosity. The third part used a system of model solutions to study the interaction of instrumental viscosity on the perception of ethanol, acidity, and viscous mouth-feel. Two levels of tartaric acid (3,5 g/L), two levels of ethanol (10, 13% v/v), and three levels of measured viscosity (1.6, 1.8, 2.0 cP at 20°C) were selected to create 12 model wines. Increasing measured viscosity of the model solutions affected the perceptions of sweet, sour, bitter, viscosity, and ethanol. Increasing measured viscosity increased the perceptions of viscosity and sweet, simultaneously decreasing the perceptions of bitter and ethanol.

Special attention is paid to toxicological and organoleptic repercussions associated with the presence of these natural components of wines. This book also aims to characterise the red wine through dielectric parameters. An overview of the basics of the dielectric properties of materials, specifically in foods is also presented. Phenolic compounds in wines, especially in red wines, possess strong antioxidant activity in vitro. Phenolic compounds, obtained in red wine, are natural constituents of grapes and wines. They have the largest effect in decreasing atherosclerosis by both hypolipemic and antioxidant mechanisms. Thus, phenolics show a positive effect on human health and they may cause an increase of antioxidant activity of blood plasma. In this book, the effect of total phenolics [TP], total anthocyanins [TA] on the antioxidant activity [AA] is discussed. Furthermore, the applications of the different analytical methods that have been developed so far for the analysis of natural antioxidants in red wine are discussed, such as high-performance liquid chromotography (HPLC), gas chromatography (GC), and capillary electrophoresis (CE). Also, the agents influencing the phenolic profiles of red wine are overviewed. Wine safety and healthiness depend on the interactions among various factors, several of which of microbial origin. This book explores scientific knowledge on the microbial role in the healthiness and safety enhancement of red wines, by proposing a specific selection of microbial starters. Furthermore, the growth and metabolism of lactic acid bacteria (LAB), which are essential in the quality of many fermented beverages like cider and wine, are discussed. In addition to malic acid, some other organic acids, sugars and carbon sources may be utilised by LAB modifying the sensory quality of these products. In fruit juice and related product, for example, they are considered spoilage microorganisms. Sulphur dioxide (SO2) is one of the most debated chemical components used in enology. Its important antioxidant, preservative and antiseptic properties are indispensable for the health, stability and quality of wine. Flow injection analysis offers great potentials on the field of automation in terms of high sampling rate, precision, accuracy and cost effectiveness. This book reviews automated flow injection methods for the determination of sulphur dioxide in wines. Moderate wine intake could play a protective role in several systems, including cardiovascular, digestive and neuroendocrine ones. Since the description of the French paradox, many beneficial effects of red wine have been described, namely those linked to cardiovascular disease protection. The most recent findings regarding the effects of red wine or its components on the adipose tissue are reviewed. In addition, it has been shown that red wine polyphenolics causes substantial falls in blood pressure, thus improving endothelial function and decreasing oxidative stress. These studies on vascular endothelium are also looked at. The main component considered responsible for the reduced risk of death in alcoholic beverages is ethanol. This book reviews the data generated to date on the amount of phenolic compounds necessary to elicit certain cardioprotective effects. This data may have implications for national alcohol and dietary guidelines, for medical practitioners who 'prescribe' daily moderate wine consumption, as well as for the wine industry per se redeveloping healthier wine styles and types.
