Book The Edible Clams Mussels and Scallops of California Classic Reprint

Download or read book The Edible Clams Mussels and Scallops of California Classic Reprint written by Frank W. Weymouth and published by . This book was released on 2015-06-30 with total page 120 pages. Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from The Edible Clams, Mussels, and Scallops of California The present paper has two purposes. First, it is an attempt to estimate the economic importance to the state of the bivalves here treated by putting on record the extent and position of the available mollusk producing grounds, the number and abundance of the edible species, and by contributing to a knowledge of their life histories lay the foundation for such protective legislation as may in the future be found necessary. Secondly, it proposes to make available to the camper and amateur naturalist a means of identifying the more common and important bivalves. During the last few years several agencies, chief among which are the development of the automobile and the extension of good roads, have greatly increased the number of people reaching the woods, the mountains and the sea. The campers at the seashore should realize the possibilities of food in the clams, mussels and other bivalves of the California coast, for these animals are at their best when freshly taken. It is hoped that the key and the figures here presented will enable any one to recognize the forms met with on this coast and that the accounts of their habits and use will make it possible to find and to utilize a source of food now distinctly neglected. By directing the attention of the camper to the interesting adaptations and beauties of these little known animals, his pleasure in the great out of doors will be correspondingly increased. Nearly five hundred species of bivalves are known from the west coast of America north of Mexico. Many of these are, of course, too small or too rare to be of possible food value. The following key will serve to identify the forms treated in the present paper, which includes, it is believed, all those to be met with in the markets or likely to be dug for food, but it must be remembered that many others, usually less abundant or less conspicuous, will be found on this coast. As far as known this is the first key to the bivalves of the coast that has been published and the task of selection has proved to be a difficult one. In treating the species the nomenclature and order given by Dall has been followed except in the matter of the use of subgeneric names in which the usage of the writer differs. For its twentieth anniversary, Harold McGee prepared a new, fully revised and updated edition of On Food and Cooking. He has rewritten the text almost completely, expanded it by two-thirds, and commissioned more than 100 new illustrations. As compulsively readable and engaging as ever, the new On Food and Cooking provides countless eye-opening insights into food, its preparation, and its enjoyment. On Food and Cooking pioneered the translation of technical food science into cook-friendly kitchen science and helped birth the inventive culinary movement known as "molecular gastronomy." Though other books have been written about kitchen science, On Food and Cooking remains unmatched in the accuracy, clarity, and thoroughness of its explanations, and the intriguing way in which it blends science with the historical evolution of foods and cooking techniques. Among the major themes addressed throughout the new edition are: · Traditional and modern methods of food production and their influences on food quality · The great diversity of methods by which people in different places and times have prepared the same ingredients · Tips for selecting the best ingredients and preparing them successfully · The particular substances that give foods their flavors, and that give us pleasure · Our evolving knowledge of the health benefits and risks of foods On Food and Cooking is an invaluable and monumental compendium of basic information about ingredients, cooking methods, and the pleasures of eating. Over the centuries, as human knowledge branched out and individuals started to study the world around them, mollusks were important subjects for learning how things worked. In this volume, the editors and contributors have brought together a broad range of topics within the field of malacology. It is our expectation that these topics will be of interest and use to amateur and professional malacologists.

These criteria are to accurately reflect the latest scientific knowledge (a) on the kind and extent of all identifiable effects on health and welfare including, but not limited to, plankton, fish shellfish, wildlife, plant life, shorelines, beaches, aesthetics, and recreation which may be expected from the presence of pollutants in any body of water including ground water; (b) on the concentration and dispersal of pollutants, or their byproducts, through biological, physical, and chemical processes; and (c) on the effects of pollutants on biological community diversity, productivity, and stability, including information on the factors affecting rates of eutrophication and organic and inorganic sedimentation for varying types of receiving waters. In a continuing effort to provide those who use EPA's water quality and human health criteria with up-to-date criteria values and associated information, the document was assembled. Book excerpt: A guide book to the 75 best shacks in the Northeast with historical background, biographical portraits of the owners, highlights from the menu, driving directions, photos, recipes, and more. The clam shacks scattered along New England’s coastline have been magnets for tourists and locals for decades. These (for the most part) seasonal eateries are imbued with character, nostalgia, and plenty of good, fresh seafood that is nearly always taken from local waters. Deep-fried clams, scallops, flounder, lobster rolls, steamers, chowders, corn on the cob, french fries, onion rings, homemade ice cream--all these things scream summer, sun, sand, and fun along the hundreds of miles of New England shoreline. And the shacks themselves are sights to behold, many designed in whimsical motifs that are a delight when viewed from the road or (better yet) from a picnic table right on the premises. New England Clam Shacks will be a road-trip-style guide to the 75 or so best shacks, starting in Connecticut and heading north and east through Rhode Island, Massachusetts, New Hampshire, and Maine. Each shack entry will feature a lively general description and historical background; biographical portraits of the owners past and present; highlights from the menu; driving directions; and two to three photos of each establishment. Sidebars scattered throughout the guide will feature recipes, clam shack legends and lore, information on local fishing fleets, and personal reminiscences from a broad array of clam shack aficionados (some of them, hopefully, celebrities). In short, whatever fits the clam shack zeitgeist and spirit will find its way into this unique and useful take-along guidebook and trip planner.
