Book excerpt: Although there is considerable historical literature describing the social and economic impact of drought on the prairies in the 1930s, little has been written about the challenges presented by drought in more contemporary times. The drought of 2001-02 was, for example, the most recent large-area, intense, and prolonged drought in Canada and one of Canada's most costly natural disasters in a century. Vulnerability and Adaptation to Drought on the Canadian Prairies describes the impacts of droughts and the adaptations made in prairie agriculture over recent decades. These adaptations have enhanced the capacity of rural communities to withstand drought. However, despite the high levels of technical adaptation that have occurred, and the existing human capital and vibrant social and information networks, agricultural producers in the prairie region remain vulnerable to severe droughts that last more than a couple of years. Research findings and projections suggest that droughts could become more frequent, more seveare, and of longer duration in the region over the course of the 21st century. This book provides insights into the conditions generating these challenges and the measures required to reduce vulnerability of prairie communities to them. This volume develops a greater understanding of the social forces and conditions that have contributed to enhanced resilience, as well as those which detract from successful adaptation and examines drought through an interdisciplinary lens encompassing climate science and the social sciences

The industry has changed from an essentially farm-based operation to one where economies of scale in rearing and processing have led to a high degree of operational efficiency. As a sequel to these changes, however, there is now greater emphasis on product quality, rather than mere 'production at least cost'. Also, the more recent growth in further processed and 'value-added' convenience items has helped to maintain a buoyant market for poultry, and has shown that the industry can rapidly adapt to changing consumer needs and preferences. It is in the areas of primary processing and further-processed product development that the greatest technological changes have occurred within the industry. Processing, in particular, has become more mechanical, so that most stages in the production of oven-ready carcasses or cut-portions are now either semi-or fully-automated, thus reducing labcur costs and helping to maximise the speed and efficiency of the process. However, not all of the changes that have taken place have necessarily been in the best interests of maintaining product quality, e.g. in relation to meat tenderness and microbial contamina tion, and it is essential for any processor to understand fully the effects of processing on all aspects of meat quality, including the efficacy of possible control measures.

Arsenic (As) is a widely distributed element in the environment having no known useful physiological function in plants or animals. Historically, this metalloid has been known to be used widely as a poison. Effects of arsenic have come to light in the past few decades due to its increasing contamination in several parts of world, with the worst situation being in Bangladesh and West Bengal, India. The worrying issue is the ingestion of arsenic through water and food and associated health risks due to its carcinogenic and neurotoxic nature. The impact of the problem is widespread, and it has led to extensive research on finding both the causes and solutions. These attempts have allowed us to understand the various probable causes of arsenic contamination in the environment, and at the same time, have provided a number of possible solutions. It is reported that more than 200 mineral species contain As. Generally, As binds with iron and sulfur to form arsenopyrite. According to one estimate from the World Health Organization (WHO), contextual levels of As in soil ranges from 1 to 40 mg kg-1. Arsenic toxicity is related to its oxidation state which is present in the medium. As is a protoplastic toxin, due to its consequence on sulphydryl group it interferes in cell enzymes, cell respiration and in mitosis. Exposure of As may occur to humans via several industries, such as refining or smelting of metal ores, microelectronics, wood preservation, battery manufacturing, and also to those who work in power plants that burn arsenic-rich coal.
