Book excerpt: Salado, a small village in Central Texas, enjoys a classic history. One of the first colleges in the state of Texas was founded at Salado. One of the village's first homes was a 22-room Classic Revival plantation house, which still sits today in the midst of a ranch covering several thousand acres. Other stately homes soon followed, many of them bearing historical markers today. Herds of cattle followed the Chisholm Trail across the spring-fed waters of Salado Creek. Dusty cowhands rested and ate their fill at the old Shady Villa Hotel. The stage stops at the hotel always brought excitement and, occasionally, renowned visitors such as Stephen F. Austin, Gen. Sam Houston, and Gen. Robert E. Lee.

Book excerpt: An intriguing historical insight into one of Salado's mos treasured institutions. The Stagecoach Inn from its earliest days was responsible for putting Salado on the map. Generations have celebrated milestones within those walls. How many marriages have begun with a Strawberry kiss and a stay at the Stagecoach Inn? Carol Wilson's history and those who have fond memories of dining at "The Inn." Oh, the memories of those steaming cornmeal hushpuppy fingers! They were fried heaven slathered with butter. And the strawberry kiss should have been called "a lover's smooch on a plate." From a 19th-century frontier respite to a wayfarers' oasis off the interstate, Salado's Stagecoach Inn has been the center of folklore and oral traditions. Carol Wilson carefully, artfully untangles the story of the famed Salado eatery while dispelling many myths. Along the way, she displays tender respect for those longtime, unheralded employees who waited tables and cooked with missionary zeal to the delight of hungry travelers.

Two recipes from each establishment are offered to form a well balanced selection of Texas cuisine. A brief history of each of the 70 restaurants is included, followed by basic information such as hours of operation, location, and other important details. The recipes themselves are an eclectic mix of the simple and the exotic, from the Cowboy Omelet at Beaumont's The Pig Stand to the Jicama Salad at Dallas's famous Mansion on Turtle Creek. Two indexes, one to restaurants and the other to recipes, make the book equally useful as both a travel guide and a cook book.
