Book excerpt: In a study of 900 chicks, both male and female "broiler carcass compositions were altered by dietary amino acid and energy levels at 21 and 56 days of age. Amino acid levels of 80, 100 and 120% of NRC requirements were fed at 3000, 3300, and 36OO kcal ME/kg of diet energy levels, respectively. Carcass moisture levels increased and carcass fat levels decreased with increasing dietary amino acid levels. Carcass protein levels were 15*96 and 18.13% of the carcass (wet weight "basis), carcass ash levels were 2.10 and 2.61%, carcass fat levels were 1*1-.26 and 13.00%, and carcass moisture levels were 6U.9 and 63.60% at 21 and 56 days of age, respectively. Book excerpt: Three studies were conducted to determine the effects of dietary energy, meat protein, ascorbic acid, iron, and sex upon the performance and collagen parameters of eight-week old broilers. The first study had 15 male and 15 female broilers allotted to each of four separate treatment groups. Each treatment was fed a diet which contained one of two levels of metabolizable energy (3190, 3410 kcal ME/kg diet) and meat and bone meal, 50% protein (0, 12%). The second study had 80 male and 80 female broilers randomly divided among eight treatment groups. Each treatment was fed one of two levels of metabolizable energy (3190, 3410 kcal ME/kg diet), meat and bone meal, 50% protein (0, 15%), and ascorbic acid (0, 1 g ascorbic acid/ kg diet). The third study had 48 male and 48 female broilers randomly divided among four treatment groups with two replicates per group. Each group was fed a diet which contained one of two levels of metabolizable energy (3190, 3410 kcal ME/kg diet). One diet of each energy level was supplemented with ferrous sulfate to increase the iron level by 200 mg iron/kg diet. Data from these three studies indicate that the eight-week body weight was not significantly affected by feeding diets which differed in energy levels of 3190 or 3410 kcal ME/kg diet. No significant differences in feed utilization were observed which could be attributed to the variation in dietary energy, but the high energy diets tended to give better efficiencies of feed utilization. Variation of dietary energy had no effect on the collagen cross-linking in skin tissue. The total collagen content and insoluble collagen content of the broiler skin tissue was not affected by dietary energy when the broilers were reared in cooler environmental temperatures.

Book excerpt: Amino acids (AAs) are not only building blocks of protein, but are also signalling molecules as well as regulators of gene expression and the protein phosphorylation cascade. Additionally, AAs are key precursors for syntheses of hormones and low-molecular weight nitrogenous substances with each having enormous biological importance. For example, physiological concentrations of AA metabolites (e.g., nitric oxide, polyamines, glutathione, taurine, thyroid hormones, and serotonin) are required for cell functions. Growing evidence shows that humans and animals have dietary requirements for all proteinogenic AAs. Mammals, birds and fish also have species- and age-dependent needs for some AA-related substances. However, elevated levels of other products (e.g., ammonia, homocysteine, H2S, and asymmetric dimethylarginine) are pathogenic factors for neurological disorders, oxidative stress, and cardiovascular disease. Thus, optimal amounts of AAs and their ratios in diets and circulation are crucial for whole body homeostasis and health. Adequate provision of one or a mixture of functional AAs or metabolites may be beneficial for ameliorating health problems at various stages of the life cycle (e.g., fetal growth restriction, neonatal morbidity and mortality, weaning-associated intestinal dysfunction and wasting syndrome, obesity, diabetes, cardiovascular disease, the metabolic syndrome, and infertility). Dietary supplementation of these nutrients can also optimize the efficiency of metabolic transformations to enhance muscle growth, milk production, and athletic performance, while preventing excess fat deposition and reducing adiposity. Therefore, functional AAs hold great promise in improving the growth, health and well-being of individuals.
