It provides us with a sense of history and a feeling of pride in what women could and did accomplish. It is also disturbing because far too many of the issues are still relevant.

Wash and drain it; grate a large nutmeg, as much salt and a little less of pounded cloves, mix them together and rub over the sides of the meat well. Then pour over three pints of Claret or Port wine, and let it remain all night. Take a long piece of strong cloth the width of the beef, wind it round very tight and sew it. Make the stuff ing of two pounded crackers, sweet marjoram, pepper, salt, a nutmeg, butter, wine and one or two eggs, cut deep holes in it and put in the stuffing. Then rub over as much spice and salt as you did before. Put a piece of twine or tape over it, that it may more easily be taken from the pot. Place a drainer in the bottom and put in the beef with about half of the wine, adding the remainder mixed with three pints of water. Put in a kettle and cover with cold water; have twice as much water as meat. Add 1 onion, 2 whole cloves, 6 pepper corns, a piece of celery root, and 1 tablespoonful of salt. Let it cook 4 hours, skimming often; then add 6 sliced tomatoes, or a one-quart can of tomatoes. Cook 1 hour longer, then skim out the bones and meat and strain the liquor through a puree strainer, rubbing all the tomato pulp through. To one pint of spirits of wine, add two ounces of gum shellac, and half an ounce of gum sandrach; place the whole over a gentle fire, frequently agitating it till the gums are dissolved. Then make a roller of list, put a little of the mixture upon it, and cover that with a soft linen rag, which must be slightly touched with cold-drawn linseed oil. Rub them into the wood in a circular direction, covering only a small space at a time, till the pores of the wood are filled up. After this, rub in, in the same manner, spirits of wine, with a small portion of the polish added to it, and the effect will be complete. To extract Oil from Wood or Stone. - Take one pound of pearlash, half a pound of fresh burnt lime, and a gallon of boiling water; dissolve the pearlash in two pints of the water, and add the remainder of the water to the lime; mix the hot liquors together, and then set the mixture aside in a covered vessel, and when it is cold let it be strained through a cotton bag, and preserve it for use in well corked bottles. To give a fine Colour to Mahogany. - Into a pint of cold-drawn linseed oil put one ounce of alkanet root, and one ounce of rose pink, in an earthen vessel; let it remain all night; then stirring it well, rub some of it over the tables with a linen rag: when it has lain some time, rub it with a linen cloth.
