Available in PDF, EPUB and Kindle. Book excerpt: Based on a thorough review of the scientific evidence, this book provides the most authoritative assessment yet of the relationship between dietary and nutritional factors and the incidence of cancer. It provides interim dietary guidelines that are likely to reduce the risk of cancer as well as ensure good nutrition.

Book excerpt: This is book 1 of 5 of the Understand Cancer Series. After reading this series, the reader will understand the cause, prevention, and treatment of cancer based on the best-available science. This book answers the question, “What causes cancer?” It examines the secondary causes of cancer. Is cancer caused by genetics, the environment, or diet? The book provides insight into breast cancer, liver cancer, pancreatic cancer, colorectal cancer, and many other types of cancers—all backed by scientific research. The references in this book alone are over 100 pages. This book may be the most authoritative voice on the subject.

Download or read book The Health Effects of Nitrate Nitrite and N Nitroso Compounds written by Assembly of Life Sciences (U.S.). Committee on Nitrite and Alternative Curing Agents in Food and published by National Academies. This book was released on 1981 with total page 548 pages. Available in PDF, EPUB and Kindle. Book excerpt: Abstract: This first volume of a 2-volume report attempts to assess the health risks associated with overall exposure to nitrate, nitrite, and N-nitroso compounds, with emphasis on the risks from natural and supplemented nitrate and nitrite in foods and the use of nitrite as a food preservative. An evaluation was made of the toxicologic and carcinogenic significance of exposure to these chemical species and their potential health risks. A number of conclusions are developed from this evaluative report. These include: nitrate is neither carcinogenic nor mutagenic; nitrite is not a direct-acting carcinogen; most N-nitroso compounds are carcinogenic in laboratory animals, but the experimental data are of limited value in predicting their quantitative risk to humans; the nitrosation-inhibiting effects of ascorbate and other substances have been established; and, due to possible health risk in using nitrate as a curing agent, a search for alternatives should be continued. The use of nitrate and nitrite in foods and the chemistry of these materials are discussed. (wz).
Download or read book Environmental Aspects of Cancer written by Ernst Ludwig Wynder and published by . This book was released on 1983 with total page 322 pages. Available in PDF, EPUB and Kindle. Book excerpt: Abstract: The proceedings of a 1982 international conferencecovers 18 authoritative papers for health and nutrition scientists on the current scientific understanding of relationships between a variety of food components and cancer. Topics include: a detailed overview of nutrition andcancer; the association of macro food components with cancer (lipid components; dietary fiber (mechanism of action; intestinal cancer); mutagenic amines in protein hydrolysates and in cooked food; the assocation of food micro nutrients and micro-components with cancer (preventionand causation); potential food-borne carcinogens (mechanisms of action; mycotoxins, nitrite; artifical sweeteners); science vs. food law, legislation, and policy; and nutritional factors for preventing common cancers and coronary heart disease. An introduction to the field of nutrition and cancer in the 1980's and a summary of the conference are provided by the conference chairpersons. (wz).
Download or read book How Tobacco Smoke Causes Disease written by United States. Public Health Service. Office of the Surgeon General and published by . This book was released on 2010 with total page 728 pages. Available in PDF, EPUB and Kindle. Book excerpt: This report considers the biological and behavioral mechanisms that may underlie the pathogenicity of tobacco smoke. Many Surgeon General's reports have considered research findings on mechanisms in assessing the biological plausibility of associations observed in epidemiologic studies. Mechanisms of disease are important because they may provide plausibility, which is one of the guideline criteria for assessing evidence on causation. This report specifically reviews the evidence on the potential mechanisms by which smoking causes diseases and considers whether a mechanism is likely to be operative in the production of human disease by tobacco smoke. This evidence is relevant to understanding how smoking causes disease, to identifying those who may be particularly susceptible, and to assessing the potential risks of tobacco products.
