Cutting edge techniques meet time-honed traditions in 100 boldly flavored recipes that will help you turbocharge your game at the grill. Here’s how to reinvent steak with reverse-seared beef tomahawks, dry-brined filets mignons, ember-charred porterhouses, and T-bones tattooed with grill marks and enriched, the way the pros do it, with melted beef fat. Here’s how to spit-roast beer-brined cauliflower on the rotisserie. Blowtorch a rosemary veal chop. Grill mussels in blazing hay, peppery chicken under a salt brick, and herb-crusted salmon steaks on a shovel. From Seven Steps to Grilling Nirvana to recipes for grilled cocktails and desserts, Project Fire proves that live-fire, and understanding how to master it, makes everything taste better. “Once again, steven Raichlen shows off his formidable fire power and tempting recipes.” —Francis Mallmann

Book excerpt: James Beard Award Winner A trailblazing chef reinvents the art of cooking over fire. Gloriously inspired recipes push the boundaries of live-fired cuisine in this primal yet sophisticated cookbook introducing the incendiary dishes of South America's biggest culinary star. Chef Francis Mallmann—born in Patagonia and trained in France's top restaurants—abandoned the fussy fine dining scene for the more elemental experience of cooking with fire. But his fans followed, including the world's top food journalists and celebrities, such as Francis Ford Coppola, Madonna, and Ralph Lauren, traveling to Argentina and Uruguay to experience the dashing chef's astonishing—and delicious—wood-fired feats. The seven fires of the title refer to a series of grilling techniques that have been singularly adapted for the home cook. So you can cook Signature Mallmann dishes—like Whole Boneless Ribeye with Chimichuri; Salt-Crusted Striped Bass; Whole Roasted Andean Pumpkin with Mint and Goat Cheese Salad; and desserts such as Dulce de Leche Pancakes—indoors or out in any season. Evocative photographs showcase both the recipes and the exquisite beauty of Mallmann's home turf in Patagonia, Buenos Aires, and rural Uruguay. Seven Fires is a must for any griller ready to explore food's next frontier.

Book The Hamlet Fire

    Book Details:
  • Author : Bryant Simon
  • Publisher : UNC Press Books
  • Release : 2020-07-23
  • ISBN : 1469661373
  • Pages : 320 pages

Download or read book The Hamlet Fire written by Bryant Simon and published by UNC Press Books. This book was released on 2020-07-23 with total page 320 pages. Available in PDF, EPUB and Kindle. Book excerpt: For decades, the small, quiet town of Hamlet, North Carolina, thrived thanks to the railroad. But by the 1970s, it had become a postindustrial backwater, a magnet for businesses in search of cheap labor and almost no oversight. Imperial Food Products was one of those businesses. The company set up shop in Hamlet in the 1980s. Workers who complained about low pay and hazardous working conditions at the plant were silenced or fired. But jobs were scarce in town, so workers kept coming back, and the company continued to operate with impunity. Then, on the morning of September 3, 1991, the never-inspected chicken-processing plant a stone's throw from Hamlet's city hall burst into flames. Twenty-five people perished that day behind the plant's locked and bolted doors. It remains one of the deadliest accidents ever in the history of the modern American food industry. Eighty years after the Triangle Shirtwaist Fire, industrial disasters were supposed to have been a thing of the past in the United States. However, as award-winning historian Bryant Simon shows, the pursuit of cheap food merged with economic decline in small towns across the South and the nation to devalue laborers and create perilous working conditions. The Hamlet fire and its aftermath reveal the social costs of antiunionism, lax regulations, and ongoing racial discrimination. Using oral histories, contemporary news coverage, and state records, Simon has constructed a vivid, potent, and disturbing social autopsy of this town, this factory, and this time that exposes how cheap labor, cheap government, and cheap food came together in a way that was destined to result in tragedy.

Book Project Vesta Fire in Dry Eucalypt Forest

Download or read book Project Vesta Fire in Dry Eucalypt Forest written by JS Gould and published by CSIRO PUBLISHING. This book was released on 2008-08-12 with total page 230 pages. Available in PDF, EPUB and Kindle. Book excerpt: Project Vesta was a comprehensive research project to investigate the behaviour and spread of high-intensity bushfires in dry eucalypt forests with different fuel ages and understorey vegetation structures. The project was designed to quantify age-related changes in fuel attributes and fire behaviour in dry eucalypt forests typical of southern Australia. The four main scientific aims of Project Vesta were: To quantify the changes in the behaviour of fire in dry eucalypt forest as fuel develops with age (i.e. time since fire); To characterise wind speed profiles in forest with different overstorey and understorey vegetation structure in relation to fire behaviour; To develop new algorithms describing the relationship between fire spread and wind speed, and fire spread and fuel characteristics including load, structure and height; and to develop a National Fire Behaviour Prediction System for dry eucalypt forests. These aims have been addressed through a program of experimental burning and associated studies at two sites in the south-west of Western Australia.

Book Alliances in the Anthropocene

Download or read book Alliances in the Anthropocene written by Christine Eriksen and published by Springer Nature. This book was released on 2020-02-29 with total page 148 pages. Available in PDF, EPUB and Kindle. Book excerpt: This book explores how fire, plants and people coexist in the Anthropocene. In a time of dramatic environmental transformation, the authors examine how human impacts on the planetary system are being felt at all levels from the geological and the arboreal to the atmospheric. The book brings together the disciplines of human geography and art history to examine fire-plant-people alliances and multispecies world-making. The authors listen carefully to the narratives of bushfire survivors. They embrace the responses of contemporary artists, as practice becomes interwoven with fire as well as ruin and regrowth. Through visual, textual and felt ways of being, the chapters illuminate, illustrate, impress and imprint the imagined and actual agency of plants and people within a changing climate — from Aboriginal ecocultural burning to nuclear fire. By holding grief and enacting hope, the book shows how relationships come to be and are likely to change due to the interdependencies of fire, plants and people in the Anthropocene.
