These processes can be relatively simple, with minimal microbial involvement, or more complex, involving defined ingredients and starter cultures with controlled environmental conditions. Most meat fermentations rely on the use of salt as an ingredient, sometimes with the addition of nitrate, nitrite and spices. In some cases the meat may be smoked and, as with some cheese fermentations, fermented meats may be ripened by moulds and yeasts. The preservation of meats by fermentation depends on the interaction of a number of environmental and microbio logical factors including the pH, water activity, redox potential and the presence of preservatives and a competitive microftora. The subject of fermented meats is an important but relatively specialised area of microbiology and food technology. Few books have specifically addressed this subject and the topic has usually been dealt with in reviews and research papers with a significant proportion of these being published in languages other than English. Gen- ally, inflammation may be divided into acute, chronic, and autoimmune, - though the editors believe that most, if not all, chronic states are often the result of an autoimmune response to an endogenous antigen. Thus, a proper understanding of the inflammatory basis may provide clues to new therap- tic targets not only in classical inflammatory diseases, but atherosclerosis, cancer, and ischemic heart disease as well. The lack of advances in classical inflammatory diseases, such as rh- matoid arthritis, may in part arise from a failure to classify the disease into different forms. That different forms exist is exemplified in patients with d- fering responses to existing antiinflammatory drugs, ranging from nonresponders to very positive responders for a particular nonsteroidal an- inflammatory drug (NSAID). Though researchers have progressively unr- eled the mechanisms, the story is far from complete. It should also be noted that the inflammatory response is part of the innate immune response, or to use John Hunter’s words in 1795, “inflammation is a salutary response.” That may be applied in particular to the defensive response to invading micro- ganisms.

To overcome this serious issue, bioactive metabolites and other natural products were exploited to combat bacterial infections and biofilm-related health consequences. Natural products exhibited promising results in vitro, however; their efficacy in in vivo conditions remain obscured due to their low-solubility, bioavailability, and biocompatibility issues. In this scenario, nanotechnological interventions provide a multifaceted platform for targeted delivery of bioactive compounds by slow and sustained release of drug-like compounds. The unique physico-chemical properties, biocompatibility and eco-friendly nature of bioinspired nanostructures has revolutionized the field of biology to eradicate microbial infections and biofilm-related complications. The green-nanotechnology based metal and metal oxide nanoparticles and polymeric nanoparticles have been regularly employed for antimicrobial and antibiofilm applications without causing damage to host tissues. The implications of these nanoparticles toward achieving sustainability in agriculture by providing systemic resistance against a variety of phytopathogens therefore plays crucial role in growth and crop productivity. Also the advent of smart and hybrid nanomaterials such as metal-based polymer nanocomposites, lipid-based nanomaterials and liposomes have the inherent potential to eradicate bacterial biofilm-related infections in an efficient manner. The recent development of carbon-based nanomaterials such as carbon nanotubes (CNTs) and silica based nanomaterials such as mesoporous silica nanoparticles (MSNs) also exploit a target of dreadful healthcare conditions such as cancer, immunomodulatory diseases, and microbial infections, as well as biofilm-related issues owing to their stability profile, biocompatibility, and unique physio-chemical properties. Recently novel physical approaches such as photothermal therapy (PTT) and antimicrobial photodynamic therapy (aPDT) also revolutionized conventional strategies and are engaged in eradicating microbial biofilm-related infections and related health consequences. These promising advancements in the development of novel strategies to treat microbial infections and biofilm-related multidrug resistance (MDR) phenomenon may provide new avenues and aid to conventional antimicrobial therapeutics.
