Book excerpt: In recent years, the public has become increasingly concerned with how animals in the food industry are handled during production. Regarding the pork industry, processing and weaning are arguably the most stressful events in a young pig’s life. Past research suggests that sow diets with increased omega-3 fatty acids can increase litter size, piglet cognitive ability, and decrease mortality. The objectives of the study were to: document the effects of feeding sows a diet rich in omega 3 fatty acids during gestation and lactation on the inflammatory response in piglets during litter processing and evaluate the cognitive and behavioral effects of gestational supplementation of omega-3 fatty acids on weaned pigs. Eight gilts were utilized in a CRB design. Gilts were randomly assigned to one of two dietary groups; CONT (corn starch) or N3FA (SALMATE). Sow/gilt milk and blood samples were collected and analyzed for fatty-acid content. Piglet blood samples were analyzed for fatty acid content and neutrophils count. Behavior was observed and documented for 24hrs post processing. After d 3 processing and castration N3FA piglets tended to have greater concentrations of neutrophils, monocytes, eosinophils, and basophils than CONT piglets. Similarly, maternal stress, such as bacterial infection, may alter programming of the fetal hypothalamic-pituitary-adrenal axis and the immune system, ultimately affecting offspring performance and predisposing them to disease later in life. Omega-3 polyunsaturated fatty acid (n-3 PUFA) supplementation of nursery pigs or sows may reduce stress and promote nursery pig health and growth. Fish oil (FO) is considered a major source of n-3 PUFA; however, microalgae (AL) may provide an alternative source of n-3 PUFA. The objectives of this thesis were to investigate the effects of AL and FO supplementation in nursery pig and sow diets on nursery pig growth, stress and immune responses. In our first study, piglets were fed low-quality protein diets supplemented with AL, FO, or a corn oil (CO) control. In our second study, sows were fed diets supplemented with AL, FO, or CO in late gestation, and were immune challenged with lipopolysaccharide (LPS) on gestation day 112 to simulate a bacterial infection; their offspring were then placed on high- or low-quality protein diets at weaning. In both trials, the piglet stress response was assessed using an LPS immune challenge, and fever, cortisol and cytokine responses were measured to assess the acute-phase response. The piglet acquired immune response was also assessed using a dermal hypersensitivity challenge with novel protein antigens ovalbumin (OVA) and Candida Albicans (CAA), as well as by measuring OVA- and CAA-specific antibody responses. Results from the first trial showed that neither AL, nor FO supplementation affected offspring growth, however, both supplements reduced the fever response following LPS challenge. The AL treatment also resulted in increased cytokine concentrations. Results from the second trial showed that concentrations of cytokines were not affected by maternal diet and LPS immune challenge, but were decreased in pigs fed a low-quality protein diet. Despite the lack of maternal effects on the serum cytokine response, changes in male offspring adrenal transcriptome suggest that maternal treatments can influence lipid metabolism, steroidogenesis and immune response in the offspring. In both trials, the acquired immune response was not affected by the experimental treatments.

Some saturated and monounsaturated fatty acids can be synthesized by humans, whereas long-chain polyunsaturated fatty acids (PUFAs) such as α-linolenic acid and linoleic acid cannot and are deemed essential. The products of these acids, such as DHA, which is important for early visual and neurological development, are extremely important to human health. Replacing SFAs with omega-3 and omega-6 fatty acids in the diet reduce the risk of cardiovascular diseases and prevent Alzheimer's, bipolar disorder, and schizophrenia, among other benefits. The ever-rising global demand for omega-3 & 6 PUFAs, however, cannot be met solely by fish oil, due to diminishing fish stocks and pollution of marine ecosystems, which has led to increased interest in alternative sustainable sources. Vegetable oils from genetically engineered plant oilseeds and microorganisms are two potential alternatives to fish oil, even though omega-3 PUFAs are highest in the latter. Although transgenic plants present numerous advantages, their production is dependent on seasonal and climatic conditions and the availability of arable land. Moreover, there are public concerns regarding the cultivation of transgenic crops in open ecosystems. These, together with regulatory issues restrict the large-scale production of genetically modified crops. Microorganisms, however, are known natural producers of microbial oils similar to those obtained from plants and animals and a possible source of nutritionally important omega-3 & 6 PUFAs. Edible insects are a promising alternative to the conventional production of meat, either for direct human consumption or for indirect use as feedstock.
