Book excerpt: The biological activity of mycotoxins ranges from weak and/or sometimes positive effects, such as antibacterial activity (see penicillin derivatives derived from Penicillium strains) to strong mutagenic (e. g. aflatoxins, patulin), carcinogenic (e. g. aflatoxins), teratogenic, neurotoxic (e. g. ochratoxins), nephrotoxic (e. g. fumonisins, citrinin), hepatotoxic, and immunotoxic (e. g. ochratoxins, diketopiperazines) activity. Nowadays, many laboratories around the world are specialized in the detection of mycotoxins in food products and contaminated material found in housing. In this volume, a focus on the most important classes of mycotoxins is provided and their chemistry of the last ten years is discussed. In each Section, the individual biological impact is outlined. Sections are arranged according to mycotoxin classes (e. g. aflatoxins) and/or structural classes (e. g. resorcinyl lactones, diketopiperazines). The biology of mycotoxins is also described.

Book excerpt: Preservation by fermentation is one of the oldest food technologies, and yet it continues to play an important role in meat preservation in many parts of the world. These processes can be relatively simple, with minimal microbial involvement, or more complex, involving defined ingredients and starter cultures with controlled environmental conditions. Most meat fermentations rely on the use of salt as an ingredient, sometimes with the addition of nitrate, nitrite and spices. In some cases the meat may be smoked and, as with some cheese fermentations, fermented meats may be ripened by moulds and yeasts. The preservation of meats by fermentation depends on the interaction of a number of environmental and microbio logical factors including the pH, water activity, redox potential and the presence of preservatives and a competitive microftora. The subject of fermented meats is an important but relatively specialised area of microbiology and food technology. Few books have specifically addressed this subject and the topic has usually been dealt with in reviews and research papers with a significant proportion of these being published in languages other than English. As far as we are aware, this volume is the first to bring together a selection of key topics relating to the production of fermented meats and their chemical and microbiological properties. The book begins with a general chapter on the properties of meat.

Book excerpt: The idea for putting together a tutorial on zeolites came originally from my co-editor, Eric Derouane, about 5 years ago. I ?rst met Eric in the mid-1980s when he spent 2 years working for Mobil R&D at our then Corporate lab at Princeton, NJ. He was on the senior technical staff with projects in the synthesis and characterization of new materials. At that time, I managed a group at our Paulsboro lab that was responsible for catalyst characterization in support of our catalyst and process development efforts, and also had a substantial group working on new material synthesis. Hence, our interests overlapped considerably and we met regularly. After Eric moved back to Namur (initially), we maintained contact, and in the 1990s, we met a number of times in Europe on projects of joint interest. It was after I retired from ExxonMobil in 2002 that we began to discuss the tutorial concept seriously. Eric had (semi-)retired and lived on the Algarve, the southern coast of Portugal. In January 2003, my wife and I spent 3 weeks outside of Lagos, and I worked parts of most days with Eric on the proposed content of the book. We decided on a comprehensive approach that ultimately amounted to some 20+ chapters covering all of zeolite chemistry and catalysis and gave it the title Zeolite Chemistry and Catalysis: An integrated Approach and Tutorial.
