The authors bring together the latest data and scientific evidence from the country to map out the current state of food systems and nutrition outcomes. They place India within the context of other developing country experiences and highlight India’s status as an outlier in terms of the persistence of high levels of stunting while following global trends in obesity. Book excerpt: Abstract: Information on the nutritive value of common Indian foodstuffs is presented to help persons evaluate existing native diets and improve inadequate diets with commonly available foods. Recent studies examining typical Indian diets have provided data establishing nutrient requirements for the Indian population. General nutrition principles useful in the planning of satisfactory diets are reviewed. Dietary allowances for the nutrients present in foods are suggested for different age and sex groups. Recommendations for improving those Indian diets known to be nutrient-deficient are given, along with practical hints for pregnant and lactating women and young children in whom malnutrition is prevalent. Food composition tables analyze the nutrient content of Indian foods and an appendix gives the names of common foodstuffs in Indian languages.
