Book excerpt: Globally, the food system and the relationship of the individual to that system, continues to change and grow in complexity. Eating is an everyday event that is part of everyone’s lives. There are many commentaries on the nature of these changes to what, where and how we eat and their socio-cultural, environmental, educational, economic and health consequences. Among this discussion, the term "food literacy" has emerged to acknowledge the broad role food and eating play in our lives and the empowerment that comes from meeting food needs well. In this book, contributors from Australia, China, United Kingdom and North America provide a review of international research on food literacy and how this can be applied in schools, health care settings and public education and communication at the individual, group and population level. These varying perspectives will give the reader an introduction to this emerging concept. The book gathers current insights and provides a platform for discussion to further understanding and application in this field. It stimulates the reader to conceptualise what food literacy means to their practice and to critically review its potential contribution to a range of outcomes.

Book Korea Nutrition and Feeding of Korean Armed Forces

Download or read book Korea Nutrition and Feeding of Korean Armed Forces written by and published by . This book was released on 1959 with total page 11 pages. Available in PDF, EPUB and Kindle. Book excerpt: This report documents the activities of Dr. John B. Youmans, Director of Field Studies and member of the Interdepartmental Committee on Nutrition for National Defense (ICNND), National Institutes of Health, who visited the Republic of Korea in March of 1959. During his visit, the programs and progress in nutrition since the 1956 health survey were discussed with U.S. and Korean officials, and the status of the programs was evaluated. He concluded that an excellent program in nutrition has been organized in the Republic of Korea (ROK) Armed Forces and is being maintained. Some areas for improvement remain, and plans have been made for their effectuation. To a large measure, the program's performance has been the result of the work of the ROKA Food Advisor, Captain Lundy, and his staff, the Korean offices and organizations concerned, and the support given by higher authorities in the United States and Korea. However, there still exists a danger of interference and damage to the program with the proposal for withdrawal of MAP support for ROK Armed Forces subsistence and changes in ration procurement procedures. An excellent opportunity exists for the strengthening of laboratory support for the nutrition program (the laboratory facilities for the nutrition survey of 1956 were given by the U.S. Army's 406th Laboratory in Japan). A spot check of nutritional status seems desirable, and the assignment of a U.S. Nutrition Officer for a period of 3-6 months is desirable and acceptable.

Book Mini Nutritional Assessment MNA

Download or read book Mini Nutritional Assessment MNA written by Bruno J. Vellas and published by Karger Medical and Scientific Publishers. This book was released on 1999 with total page 202 pages. Available in PDF, EPUB and Kindle. Book excerpt: This book is the first of a new series which will present the proceedings of the newly established Nestlé Nutrition Workshop Series: Clinical & Performance Programme aimed at adult nutrition. Undernutrition is a common phenomenon in elderly people, and malnutrition reaches significant levels in those being in hospital, nursing homes or home care programs. Consequences of malnutrition often go unrecognised owing to the lack of specific validated instruments to assess nutritional status in frail elderly persons. The Mini Nutritional Assessment (MNA) provides a single, rapid assessment of nutritional status in the elderly of different degrees of independence, allowing the prevalence of protein-energy malnutrition to be determined and to evaluate the efficacy of nutritional intervention and strategies. Easy, quick and economical to perform, it enables staff to check the nutritional status of elderly people when they enter hospitals or institutions and to monitor changes occurring during their stay. Moreover, the MNA is predictive of the cost of care and length of stay in hospital. This publication will be of immense assistance to heads of geriatric teaching units, teachers in nutrition, clinicians general practitioners and dieticians, enabling them to better detect, recognise and start treatment of malnutrition in the elderly.

Book Total Diet Studies

Download or read book Total Diet Studies written by Gerald G. Moy and published by Springer Science & Business Media. This book was released on 2013-11-08 with total page 549 pages. Available in PDF, EPUB and Kindle. Book excerpt: Unless a food is grossly contaminated, consumers are unable to detect through sight or smell the presence of low levels of toxic chemicals in their foods. Furthermore, the toxic effects of exposure to low levels of chemicals are often manifested slowly, sometimes for decades, as in the case of cancer or organ failure. As a result, safeguarding food from such hazards requires the constant monitoring of the food supply using sophisticated laboratory analysis. While the food industry bears the primary responsibility for assuring the safety of its products, the overall protection of people’s diets from chemical hazards must be considered one of the most important public health functions of any government. Unfortunately, many countries do not have sufficient capability and capacity to monitor the exposure of their populations to many potentially toxic chemicals that could be present in food and drinking water. Without such monitoring, public health authorities in many countries are not able to identify and respond to problems posed by toxic chemicals, which may harm their population and undermine consumer confidence in the safety of the food supply. From a trade perspective, those countries that cannot demonstrate that the food they produce is free of potentially hazardous chemicals will be greatly disadvantaged or even subject to sanctions in the international marketplace. The goal of a total diet study (TDS) is to provide basic information on the levels and trends of exposure to chemicals in foods as consumed by the population. In other words, foods are processed and prepared as typical for a country before they are analyzed in order to better represent actual dietary intakes. Total diet studies have been used to assess the safe use of agricultural chemicals (e.g., pesticides, antibiotics), food additives (e.g., preservatives, sweetening agents), environmental contaminants (e.g., lead, mercury, arsenic, cadmium, PCBs, dioxins), processing contaminants (e.g., acrylamide, polycyclic aromatic hydrocarbons, chloropropanols), and natural contaminants (e.g., aflatoxin, patulin, other mycotoxins) by determining whether dietary exposure to these chemicals are within acceptable limits. Total diet studies can also be applied to certain nutrients where the goal is to assure intakes are not only below safe upper limits, but also above levels deemed necessary to maintain good health. International and national organizations, such as the World Health Organization, the European Food Safety Agency and the US Food and Drug Administration recognize the TDS approach as one of the most cost-effective means of protecting consumers from chemicals in food, for providing essential information for managing food safety, including food standards, and for setting priorities for further investment and study. Total Diet Studies introduces the TDS concept to a wider audience and presents the various steps in the planning and implementation of a TDS. It illustrates how TDSs are being used to protect public health from chemicals in the food supply in many developed and developing countries. The book also examines some of the applications of TDSs to specific chemicals, including contaminants and nutrients.
