Soils are the essential basis for food and biomass provision in support of food security (SDG 2) and energy security (SDG 7). Soil carbon sequestration is paramount for climate action (SDG 13). Soil-mediated water purification and retention, nutrient and matter cycling, and soils habitat functions are essential for maintaining ecosystem services and biodiversity (SDG 15). Healthy soils perform well in all these functions simultaneously. However, the globally increasing demand for food, fiber, and bio-based products poses massive challenges to soil health. Minimizing trade-offs between biomass production and soil health requires systemic approaches to assessment and governance of sustainable soil management in agriculture and food systems. It provides interdisciplinary insights into key questions: What are the impacts of agricultural management practices on sustainability targets in specific geophysical and socio-economic contexts? What are the opportunities and risks of future trends such as climate change, digitalization, and emerging technologies for soil management and soil health? How can institutions and governance instruments be improved to enable decision makers to take action on sustainable soil management? The book was initiated in the frame of the National German research program ‘BonaRes—Soil as a sustainable resource for the bioeconomy’, and it is meant to trigger interdisciplinary thinking.

Book excerpt: The European Food Safety Agency (EFSA) has identified acrylamide as a public health concern due to its relation with the appearance of different types of cancer, and continued efforts are required to reduce exposure to acrylamide (EFSA, 2015). During the last few years, EFSA has maintained a high level of supervision to monitor the acrylamide levels in processed products, urging companies to implement effective mitigation strategies for reducing formation of this contaminant. Recently, the European Commission has published a regulation that sets mitigation measures for the reduction of this compound in foods, identifying new benchmark levels for a number of food categories (European Commission, 2017). The Regulation 2158/2017 compels food processors and food business operators in Europe to reduce the presence of acrylamide in their products, applying measures proportionate to the size and nature of the establishments. With the goal of providing information that contributes to our understanding for this process contaminant and exposure through dietary routes, this Special Issue explores the recent advances on the study of acrylamide in foods, including novel insights into the chemistry of its formation and elimination, effective mitigation strategies, conventional and innovative monitoring techniques, risk/benefit approaches, and exposure assessment.

Members of the Working Group (WG) on Sustainable Production Systems and Environmental Impact acknowledged the contribution of banana production in the total global GHG emissions and the consumption of freshwater in the economic activity, both stressed in the 2015 Paris Climate Conference (COP21), having the agricultural sector a high mitigation potential. Therefore, the WG wishes to contribute to the global fight against climate change and promote the sustainable use of natural resources, developing practical tools to strengthen the efforts of the global banana industry to reduce its carbon and water footprint (CWF). Since banana farmers are struggling to adapt to climate change, the project aims to mainstream and support the adoption of best climate-smart practices and efficient water management in the banana value chain as part of the environmental strategy of organizations. Efforts to promote CWF reduction programs in the banana industry are still incipient and carried out mostly by multinationals, due in part to the implementation costs, the complexity of the topic for farmers, the lack of user-friendly tools to measure them efficiently, and that is still a B2B-driven strategy not yet recognized by consumers. Even though the need for supporting carbon and water footprint analysis (CWF) in the banana industry remains strong, there is still an apparent lack of sufficient financial incentives by both the governments and the global market.
