The quality of feed is in turn important for animal health, the environment and for the safety of food from animal origin. Fungi belonging to the Fusarium genus are widespread in crops causing plant diseases and producing toxic metabolites. Fusarium species can colonize plants during their growth on the field and cause serious damage in terms of yield and quality of harvested grains. One of the most important fungal diseases of wheat and other cereals in the world is Fusariumhead blight caused by the fungal pathogens Fusarium graminearum and Fusarium culmorumand others. In addition, these fungi produce mycotoxins, contaminating food and feed. The most important Fusarium mycotoxins include trichothecenes, zearalenone and fumonisins, primarily because of their prevalence, but also because of the toxic effect to humans and animals. However, these fungi produce also other mycotoxins such as moniliformin, beauvericin, enniantin or fusarins. Food and feed can be contaminated with mycotoxins at various stages in the production chain resulting in serious problems with health, safety and economic losses. It is estimated that 25% of the crop in the world each year are contaminated with these metabolites, the problem affects both industrialized countries and developing countries. The aim of this Research Topic of Frontiers in Microbiology is to publish state of the art research about occurrence and genomics of Fusarium species and their mycotoxins in the whole food and feed chain starting from the crops as well as implications for health and economic aspects. This research topic highlights the current knowledge on the plant diseases caused by Fusarium fungi as well as all aspects of Fusarium mycotoxin contamination of crops, food and feed, taking into account decontamination methods.

The most important in the world’s food and feed supplies are: aflatoxins, ochratoxin A, fumonisins, deoxynivalenol, and zearalenone. Aflatoxins, produced by Aspergillus flavus and related species in grains and nuts, cause liver cancer, often in association with hepatitis B virus, and some other effects. Ochratoxin A is produced by both Aspergillus and Penicillium species in various foods including grains (in cold climates), coffee, dried grapes, and wines. It causes kidney damage and is also carcinogenic. Fumonisins are produced by Fusarium verticillioides and related species in maize. They cause brain liquefaction in horses, liver cancer in rats, and perhaps esophageal cancer in humans. Deoxynivalenol is the most commonly occurring of a large group of mycotoxins called trichothecenes, which are toxic because they interfere with protein synthesis. Deoxynivalenol and zearalenone, which is an estrogenic mycotoxin, are produced by Fusarium graminearum and related species in small grains, particularly wheat. This chapter provides an overview of the sources, occurrence, toxicity, and control of the major mycotoxins.

Mycotoxins are of major concern since they can cause acute or chronic intoxications in both humans and animals which are sometimes fatal. Many countries, particularly in Europe, have set maximum acceptable levels for mycotoxins in food and feed. The book reviews the latest literature and innovations on important aspects of mycotoxins, e.g. mycotoxin producing fungi and the related ecosystems, mycotoxin occurrence, toxicity, analysis and management. Quantitative estimation of impacts of climate change on mycotoxin occurrence have been made recently, using predictive modelling. There is also a growing interest in studying the occurrence and toxicity of multiple mycotoxins in food and feed, including emerging or modified forms of mycotoxins. Innovative tools have also developed to detect and quantify toxinogenic fungi and their toxins. In order to reduce the use of chemicals that are harmful to the environment and health of consumers, alternative methods of prevention and decontamination of mycotoxins were tested in pre- and post-harvest, using microorganisms, natural substances or radiation treatments.
