After a brief discussion of Hoskin's aims and the methodology for his fieldwork, individual chapters focus on evidence from particular regions: Malta, Gozo, the Balearics, Iberia, southern France, Corsica and Sardinia, Sicily and Pantelleria, Tunisia, Algeria and Morocco. Desde este punto de vista, los vinos fabricados con semejante filosofía vinícola no estimulan en demasía el afán de conocer. La sensación de incertidumbre y de expectativa ante los secretos que una gran botella de vino puede encerrar es tan importante como el acto mismo de su degustación. Pero para esto es preciso que haya botellas que nos motiven, botellas capaces de suscitar entusiasmos o decepciones. ¿Cómo afrontar, si no, un vino como Lafite que de largos mutismos pasa a eclosiones brillantes? Luego, y como momento tercero y final del buen ritual vinícola, vendrá la fase del comentario sutil y regocijado o del prolongado debate.
