L'apprentissage constitue l'acquisition des informations, et la mémoire assure leur rétention. Ces deux phénomènes constituent des processus dynamiques de l'utilisation de l'information par le cerveau. Cette utilisation permet a tout organisme vivant de générer des modifications comportementales en réponse à certaines conditions environnementales. Les modifications peuvent être transitoires ou permanentes. Ces modifications dépendent de mécanismes neuronaux multiples et variés : biophysiques, biochimiques, morphologiques psychologiques, etc. Ces mécanismes peuvent être fondamentaux ou modulateurs. La complexité de l'organisation du système nerveux chez les vertébrés, y compris l'homme et les invertébrés rend difficile l'étude de l'apprentissage et de la mémoire. Cependant, les travaux théoriques et expérimentaux ont permis la suggestion de plusieurs hypothèses et l'élaboration de divers modèles qui rendent compte de différents mécanismes cellulaires, de différents systèmes et circuits nerveux impliqués dans l'apprentissage et la mémoire. De très nombreux arguments expérimentaux et théoriques militent actuellement en faveur de systèmes multiples. L'analyse de ces travaux nous a permis de concevoir que les processus d'apprentissage et de mémoire se définiraient par des activités mnésiques transitoires et persistantes. Ces activités opèrent en interaction avec une autre activité importante, l'oubli. D'autre part ces processus s'organiseraient de la façon suivante: des processus d'apprentissage et de mémoire encéphalisés (vertébrés, y compris l'homme) ou centraux (invertébrés) et des processus de la base du cerveau, (notamment l'organisation mnésique de la locomotion, des réflexes, et des réponses motrices.). Ces deux systèmes auraient les structures corticales pour centre d'intégration supérieure. Plusieurs mécanismes cellulaires sont à l'oeuvre dans ces systèmes mnésiques, des mécanismes fondamentaux et des mécanismes neuromodulateurs.
