Book excerpt: Excerpt from Comparative Expense of Mechanical and Hand Milking Investigations conducted by experiment stations and the experience of a large number of dairymen have shown the practicability of mechanical milkers from the standpoint of their effect upon production, upon the quality of the milk, and upon the physical condition of the cows. The object of this study was to compare the expense of mechanical and hand milking in herds of different sizes. Data were obtained from 32 Illinois dairy farms on which 860 cows were milked mechanically and from 34 farms on which 850 cows were milked by hand. The farms were, as nearly as possible, comparable in respect to efficiency of management and methods of dairying except as to the method of milking. The average annual expense of caring for a cow milked mechanically was Man labor constituted percent of the total expense; power, percent, and mechanical milker, percent. The average annual expense 'of caring for a cow milked by hand was or more than the average expense of caring for a cow milked by machine. The labor requirement was hours per cow per annum for the cows milked by hand as compared with hours for the cows milked mechanically. In herds of less than 25 cows, the average annual expense of caring for cows milked mechanically was per cow, and in herds of 25 cows or more, per cow. This difference was made up of differences of in labor expense, in power expense, and 64 in mechanical milker expense in favor of the larger herds. Udder troubles are Often due to causes that are not in any way' associated with the method of milking practiced; they will occur at times in machine-milked, as well as in hand-milked herds, although less frequently when ordinary care is taken in operating the machine. The best way to avoid troubles of this kind in' case of machine-milking is to remove the machine as soon as no mbre milk comes. Down, and to finish the milking by hand without unnecessary delay. Prompt and careful hand stripping is a most important factor in successful machine-milking, even though the machine used leaves only very small amounts of milk to be stripped out. In the, selection Of the particular make of machine, a number of points should receive consideration, besides first cost and nearness to service agency, such as cost of up-keep, depreciation, simplicity of mechanism and of cleaning. The Various machines on the market differ considerably with regard to these points, andit is evident that no one machine stands out above the others in all respects; also that any farmer with a fair degree Of intelligence and resourcefulness need not hesitate to install a milking-machine in 'his dairy if he keeps twenty or more cows. In many cases it may prove advantageous to adopt machine-milking also in dairies of twelve to fifteen cows, as it will make the owner less dependent upon or entirely independent Of hired help; The actual saving in the cost of milking by machine over hand-milking is. Which muscles are connected with those closing the numerous milk ducts, and so far as we have noted, with vet: few exceptions, the milk flow is not increased by manipulation. A gentle pulling downward on the cups tends to secure the last of the milk, but in most cases we have found hand stripping necessary. There was a time when it seemed as if ha1d stripping would not be necessary. Soon after July 1st, the cows began to fail so much in their milk, although the pastures were excellent, that we were obliged to resort to hand stripping, and in the case of some cows to milk them altogether by hand, in order to prevent them drying two or three months before they ought. Book excerpt: Excerpt from Bacteriological Investigations of Milking Machines It will be observed, from the data presented in Table 2, that all four machines were found capable of producing milk of low contamination. The variations in the counts obtained are not considered sufficient to warrant making any distinction between the different makes, particularly in View of the fact that the ranking according to bacterial counts was not the same with the two media employed. This Is further borne out when the counts from the individual cows are considered with respect to the type of machine. Each machine was found to have the lowest average bacterial count in at least one instance. It is safe to assume that differences in contamination due to the machines tested, should such exist, are quite insignificant with proper treatment, and are obscured by other variable factors inherent in experiments of this-type. When the results Of machine milking and hand milking are compared, it will be noted that the hand drawn milk showed a somewhat lower contamina tion, the bacterial counts being, in fact, particularly low. 2 We are inclined to attribute this, at least in part, to the fact that the five employees in this test were not only desirous of beating the machine, but also vied with each other in producing the hand-drawn milk of lowest contamination. Furthermore, the adoption of the suction method of washing the machine (see Part III) in prefer ence to the brushing method used in this experiment would undoubtedly have effected some reduction in the contamination of the machine-drawn milk. Fur ther data to be presented in Part IV of this bulletin, in which a comparison of machine and hand-drawn milk is made, support the view that high grade milk may be consistently produced with either method. When the plate counts on purple-lactose agar and nutrient agar are com pared, it is seen that with machine-drawn milk the official plate count (nutri ent agar, 37 °c., 48 hours) is in all cases lower, with practically no difference in the case of hand-drawn milk. From this it would appear that bacteria capable of growing at blood heat form a larger proportion of the organisms encountered in bland-drawn milk than in milk of correspondingly low grade produced by mac me. New and improved machinery, increased use of fertilizer and water, new hybrid seed varieties, and many other developments have contributed to an increase in production of feedstuffs per man and a reduction in man-hours of labor. In many instances, the unit cost of production of these crops has been lowered by these advances. By com parison, the labor costs per unit of produc tion in milking and handling the dairy herd have risen sharply. Comparative output per man-hour and returns to labor have lagged consistently behind those of many other farm enterprises. The most rapid way to overcome this lag is to milk more cows per man, but present milking systems and chore routines limit the number of cows that one man can handle. The operation and management of com mercial dairy farms are complex. On such farms, the daily chores, of which milking constitutes about 60 percent, amount to more than 50 percent of the total number of man hours required per year. Some gains have been made in dairy chore efficiency. Bulk tanks, pipeline milking systems, bulk feed handling, mechanical feeders, barn cleaners, and other improvements have done much to lessen the labor requirements on many dairy farms. However, the milking routine represents a phase of dairy work that has remained comparatively unchanged for many years. Connected with the vacuum pump is a vacuum reservoir and a pipe running the whole length of the cow stable, with a connection valve or vacuum cock between each pair of cows. A safety valve is connected to the reservoir to prevent the vacuum from running higher than is desired. The machine itself (pl. 4, fig. 1) consists of a heavy tin pail, which is cone-shaped and holds about 55 pounds of milk. The cover of this pail is a disk, in which is a vacuum motor which produces the pulsa tions in drawing the milk from the teats. The cover fits the pail tightly and excludes all air.
