Book excerpt: Hoy en día, el tema de deterioro ambiental debería ser un asunto de importancia común para la sociedad, empresas y gobierno, ya que todo tipo de actividades productivas de alguna forma u otra, afectan el medio ambiente. La industria de hospitalidad no es la excepción, debido a esto se realizó un análisis de los hoteles de San Pedro Cholula, con el objetivo de determinar la situación actual ambiental, y conocer la realidad en cuanto a gastos energéticos y agua, generación de basura e implementación de prácticas ambientales. La investigación es de tipo cualitativa, y consistió en entrevistas con los gerentes generales, administradores o encargados de cada hotel para obtener información acerca de siete temas: características generales del hotel, gasto de energía, gasto de agua, generación de basura, otros contaminantes, cultura ambiental y percepción personal respecto al problema ambiental. Los datos recopilados fueron agrupados y analizados mediante el uso del programa Excel. Como resultados, se obtuvo que existen grandes diferencias entre los hoteles, lo cual se relaciona con la diversidad de las cifras de gastos y basura generada, que en general los consumos y desechos no representan cantidades significativas si se comparan con el total de la zona de estudio, sin embargo se observó que los hoteleros desconocen los temas ambientales y que existen áreas de mejora para disminuir la contribución negativa que puedan tener las actividades de la industria de hospitalidad al problema ambiental.

Book excerpt: La presente investigación fue realizada con el objetivo de conocer que prácticas ambientales están llevando a cabo seis diferentes hoteles de la ciudad de Puebla. Para obtener los datos necesarios, se realizaron seis cuestionarios con 14 preguntas cada uno. Estos fueron aplicados a personal calificado que labora en los hoteles, con la finalidad de conocer cuales son las prácticas ambientales, que mejor se adaptan a las necesidades de cada hotel. Algunos de los resultados obtenidos en esta investigación, revelaron que los hoteles a los que se les aplicaron los cuestionarios cuentan con programas de tipo ambiental. No obstante, algunos son más proactivos que otros. Estos resultados son muy importantes en lo relacionado al cuidado del medio ambiente, dado que muestran interés en aplicar medidas para la reducción de contaminantes. Dado que la aplicación de prácticas ambientales juegan un importante papel en la conservación del medio ambiente, es elemental que los hoteles pertenecientes a grandes corporativos hoteleros sigan teniendo interés en la aplicación de estas. Una de las conclusiones que se obtuvieron, es que es de suma importancia que los hoteles independientes se preocupen por la aplicación de prácticas ambientales, con la finalidad de contribuir al cuidado del medio ambiente. Así como también, a ayudar a fomentar una cultura que permita crear un interés en los clientes y asociados de los hoteles.

Water availability in Mexico is polarized, with abundant rainfall and large rivers in the south, and desert-like conditions in the north. The central region, which is the most industrialized, is overpopulated. Mexico City pours millions of cubic meters of “blackwater” into the northern valley daily and receives its clean water from the south. To address these unsustainable conditions, the world's 4th biggest water treatment plant went into operation in 2018. The water infrastructure and governance must satisfy the demands of all sectors, including agricultural, urban, and economic activities. At the same time, water resources are affected by drought, and climate change puts constraints on the supply. As such, regulation and monitoring are important when it comes to adherence to agreed plans and priorities. The book is divided into four sections. 1: Water Availability discusses quantitative aspects, such as supply, methods of calculation, and fracking. 2: Water Quality highlights pollution risks and diagnosis of water resources. 3: Water Allocation examines the sectoral demands and vulnerability due to unsustainable irrigation. 4: Water Governance and Management focuses on laws, urban rules, national parks, planning, and integrated water resources management, among other topics.
