Book excerpt: Food composition data are useful throughout the food system for nutrition-sensitive agriculture, improved processing methods that ensure greater nutrient retention in foods, nutrition labelling, and to inform, educate and protect consumers through food-based dietary guidelines, nutrition education and communication, and legislation. The FAO/INFOODS Food Composition Table for Western Africa (WAFCT 2019) is an update of the West African Food Composition Table of 2012, which lacked some important components, foods and recipes. WAFCT 2019 contains almost three times as many food entries and double the number of components, with increased overall data quality. Many of the data points from WAFCT 2012 have been replaced with better data – mostly analytical data from Africa, with a special emphasis on Western Africa. These improvements are essential to understanding the nutrient composition of foods in the region and to promoting their appropriate use. WAFCT 2019 is the result of four years of collaboration among INFOODS network researchers in Africa and the Nutrition and Food Systems Division of FAO, and was developed as part of the International Dietary Data Expansion (INDDEX) Project, implemented by Tufts University’s Gerald J. and Dorothy R. Friedman School of Nutrition Science and Policy, with funding from the Bill & Melinda Gates Foundation. These new data from WAFCT 2019 will support further research towards an expanded and improved evidence base and will support better, more informed decisions and effective policies and programmes for improved nutrition in Africa.

Perception is based on sensory components while actions are based on motor components. It is commonly accepted that these sensorimotor components constitute the foundation of knowledge (i.e., percepts and concepts), action and emotion. However, whether or not these components remain part of knowledge, action and emotion is still being debated (see Glenberg, Witt, & Metcalfe, 2013). According to the classical symbolic/abstracted approach of cognition, cognitive processes operate on symbols that are abstracted from these components. Reversely, embodied cognition theory states that knowledge, action and emotion remain grounded in these sensorimotor components (see Wilson, 2002). This embodiment revolution assumes that the interactions between present and absent —but simulated in memory— sensory-motor components determine the emergence of knowledge, action and emotion (Barsalou, 2008). It also implies that perception, memory (in particular conceptual knowledge), action and emotion interact together in a closer way that previously thought (e.g. Riou, Lesourd, Brunel & Versace, 2011; Corveleyn, Lopez-Moliner & Coello, 2012; Vermeulen et al., 2013). Despite the accumulation of empirical evidence showing that perception, memory, action and emotion interact together, less is known about the dynamics of these interactions. It remains to precise the temporal dynamic (when these interactions occur), the neural underlying networks, and the factors that modulate these interactions. The present research topic focuses on the dynamic relationship between present and absent sensorimotor components across perception, memory, action and emotion in a grounded cognition perspective. This research topic aims 1) to demonstrate the validity of the embodied cognition theories 2) to highlight the dynamics of emergence of conceptual knowledge, action and emotion 3) to provide a comprehensive state-of-the-art theoretical explanation and/or models.

After an idea is formulated, these contexts bring small elements of science into play, but above all human aspects ranging from motivation and the quality of exchanges to responsibility. In short, it is a possible dynamic way of living together to promote innovations stemming from science. This is not easy, but if the invention is profitable for society, the downstream sector can greatly facilitate the various stages of commercialization.
