Descriptive data were utilized from the Wellness IN the Rockies Student Survey, which consisted of 36 questions. The communities of Preston and American Falls, Idaho; Lewistown and Miles City, Montana; and Torrington and Powell, Wyoming, were the rural communities selected. The sample of 393 fifth and sixth grade students was assessed in September 2001, May 2002, and September 2002. There was not a significant increase in fruit and vegetable consumption during the second and third study time. Removing 100% of the juice from the intake data did not make a difference. Soda pop intake also increased. Body mass index (BMI) for all students increased during each of the three time periods, with a female BMI measuring 0.925 that of a male. Time on the one-mile run was identified as a predictor of BMI; that is, as the time on the one-mile run increased, so did the BMI during all three time periods. Physical activity, as measured by the one-mile run, was the best predictor of BMI in selected rural communities for fifth and sixth grade students.

According to data found in the Pediatric Nutrition Surveillance System, over 12.5 million children are overweight or obese in the United States. The prevalence of obesity is higher in Mexican-American children than other ethnic groups in the US. Current research has found that higher intakes of fruits and vegetables have been shown to help prevent and reduce chronic diseases like obesity. Low fruit and vegetable consumption may also be a contributing factor to unhealthy weight gain in children. Moreover, low consumption of fruits and vegetables may reinforce the preference for other unhealthful foods like sugar-sweetened beverages and refined carbohydrates. The objective of this study was to look at fruit and vegetable consumption in Mexican-American children at ages 2 and 4, and to examine its association with their weight status. At both time points, fruits and vegetables were estimated in cups and the nutrient intake was analyzed. It was found that fruit intake met the 2010 USDA food guidelines set for these ages, but significantly lower consumption of vegetables was observed at both ages. Micronutrients found in fruits and vegetables showed that vitamin A, C, and folate met the Dietary Reference Intakes (DRI) set for 2- and 4- year old children. However, significantly low intakes in vitamin E and potassium were observed. Furthermore, dietary fiber was significantly below the DRI at both time points. A significant 12% increase in the BMI-for-age percentile from children at 2 years of age to 4 years of age was found. However, no relationship was found between fruit and vegetable consumption with BMI-for-age percentile. Nevertheless, fruit and vegetable consumption remains important because of the vital role it plays in preventing and reducing chronic diseases in the Mexican-American population.

Book excerpt: Problem: Obesity among preschool-aged children is a major public health concern as obese children are more likely to be obese as adults, and obesity is a risk factor for many chronic diseases. Diets high in fruits and vegetables (FV) may decrease the risk of many chronic diseases as well as contribute to obesity prevention. However, many preschool-aged children in the US are not meeting recommended intakes of FV. Therefore, the purpose of this study is to examine previous interventions conducted to increase FV consumption among preschool-aged children. Methods: The search for published articles was conducted using PubMed through the Weill Cornell Medical College library. The search terms "fruit AND vegetable AND consumption AND intervention" with specific filters were used to find studies that had been conducted on preschool-aged children, had full-text versions available online, were published in English, and were of rigorous design. Results: Thirty-four articles resulted, but only 12 were eligible to be included and further examined in this paper. Conclusions: The studies showed promising results for interventions conducted among preschool-aged children to increase the consumption of FV at least in the short-term. One common theme of many of the interventions was repeated exposure to and tastes of FV. Increased fruit consumption was typically achieved through less rigorous strategies, which may be due to children's natural taste preference for sweet food items. Further, many of the interventions involved multiple components.

Fruit and vegetable (F&V) consumption has been associated with a reduced risk of obesity among children and adolescents, but few children and adolescents meet the nationally recommended amount of daily F&V consumption. Also, few studies have examined this relationship among an ethnically diverse sample. Therefore, the purpose of the current study is to explore factors (parental F&V consumption and F&V self-efficacy) related to F&V consumption among 200 Middle school girls of Hispanic and Non-Hispanic descent. Multiple group path analyses were conducted. High self-efficacy for F&V consumption was associated with higher F&V consumption among Non-Hispanic girls, and vegetable consumption among Hispanic girls. No significant relationships were observed between BMI and child fruit and vegetable consumption, or parental fruit and vegetable consumption and child fruit and vegetable consumption. Future studies should examine these relationships in a longitudinal study to determine causality.

There is a crucial need to identify environmental factors that either encourage or prevent obesogenic behaviors. The home food environment is one of the primary environments in which children are exposed to food. Therefore, it is crucial to study how the home food availability influences dietary intake and weight status. Objective: This study examines parental report of household food availability of fruits, vegetables, and milk, and its association with child weight status and child dietary intake of these foods. Methods: This is a cross-sectional study, based on surveys from 489 students in grades 3-12 their parents in 2009. Child participants were Destination ImagiNation® finalists. Child data collection included surveys based on the Youth Risk Surveillance Survey and anthropometric measurements of height and weight used to calculate child z-BMI. Parents self-reported their heights and weights and home food availability. Descriptive statistics were conducted and multiple linear regression was used to predict whether or not a relationship existed between home food availability, child weight status, and dietary intake of fruits, vegetables, and milk. Results: Overall, 12.5% of participants were overweight and 6.7% were obese. Approximately26% of participants consumed 5 or more servings of fruits and vegetables per day and 17% consumed 3 or more glasses of milk per day. However, a no significant relationship was found between home availability of fruits, vegetables, and milk and the reported intake of these foods. Although a significant association was also found between parent and child weight status, no significant association was found between home food availability and child weight status. Conclusions: Compared to national data, a larger proportion of this sample was classified as normal weight and consumed the recommended intake of fruits and vegetables and milk. Parents reported high availability of fruits, vegetables, and milk products. However, no significance was found between the reported availability of these foods and weight status or dietary intake of fruits, vegetables, or milk.

This disparity begins to develop in early childhood, and the excess weight carried by Native American children contributes to health conditions that can affect their quality of life by the time they enter preschool. These children consume less than recommended amounts of fruits and vegetables, a dietary pattern that is related to the development of obesity and other health conditions. The purpose of this mixed methods study was to explore the fruit and vegetable consumption of Native American toddlers between the ages of two and five years old through use of the Information Motivation Behavioral Skills (IMB) Model. Qualitative research with parents of Native American children and key stakeholders in Native American communities first investigated perceptions of knowledge, motivational and behavioral skills related to the fruit and vegetable consumption of Native American toddlers. Findings from the qualitative research was then used to develop an IMB Model-based quantitative assessment tool, which was administered with a fruit and vegetable food frequency questionnaire. From the quantitative phase, it was determined that caregiver fruit and vegetable-related behavioral skills was significantly associated with child fruit and vegetable intake, caregiver fruit and vegetable-related motivation was significantly associated with caregiver fruit and vegetable-related behavioral skills and caregiver fruit and vegetable-related information was significantly associated with caregiver fruit and vegetable-related motivation. Caregiver fruit and vegetable motivation was significantly associated with child fruit and vegetable intake via an indirect pathway and was mediated by caregiver fruit and vegetable-related behavioral skills. The quantitative phase provided validation of the qualitative findings and suggested that the IMB model may serve as a useful aid in developing fruit and vegetable-focused interventions for the Native American population.
