The organic manure-soil interface severely restricts the movement of water, nitrates, organic substances, and air into the soil beneath feedlots. Management practices, such as good drainage, that enhance aeration will decrease the evolution of volatile compounds.

Book excerpt: Research was conducted on experimental feedlots in Lubbock, Texas, to determine the characteristics of wastes from Southwestern cattle feedlots. The feedlots were generally operated in a manner conforming to normal commercial practice in the area. They were provided with collection pits that allowed the quantity of runoff to be measured accurately. Samples of runoff were collected routinely both during rainstorms and from the collection pits. Manure samples were also collected routinely for analysis. The quantity of runoff per unit area of concrete-surfaced lots is substantially greater than the quantity per unit area of dirt-surfaced lots. Concentrations of pollutants in concrete-lot runoff are substantially higher than corresponding concentrations in runoff from dirt-surfaced lots. Agronomic studies indicate that runoff can be used for irrigation of crops, but extreme caution is required in the application of runoff to crops to prevent damage to them.

We don't think much about how food gets to our tables, or what had to happen to fill our supermarket's produce section with perfectly round red tomatoes and its meat counter with slabs of beautifully marbled steak. We don't realize that the meat in one fast-food hamburger may come from a thousand different cattle raised in five different countries. In fact, most of us have a fairly abstract understanding of what happens on a farm. In America's Food, Harvey Blatt gives us the specifics. Overall, the degree of feedlot utilization was low, less than 70 percent of capacity. Weight gain per day for local breed was lower than for foreign and crossbreeds (1 to 15 percent). Budget analysis showed that the return to average producers covers variable costs and leaves a margin to fixed factors and management, especially for private feedlots. Differences in farm management decisions, on types and weights of animals entering and leaving feedlots, and types of feed ration had a significant effect on costs and returns to farmers.
