Book excerpt: Multiple factors need to be considered in assessing the sustainability of ruminant livestock production, such as the valuable role ruminants serve in the conversion of feeds grown on non-arable lands and by-products into products suitable for human consumption. The use of intensive systems, where ruminants are fed large quantities of potentially human edible crops, such as cereal grains, poses a debate about the competition between livestock and humans for grains that could be consumed directly by humans. Beef production is perceived as using large amounts of water, and to reduce water use, some recommend decreasing meat consumption without regard for the ecosystem benefits provided by cattle on rangeland. The inclusion of animal products in human diets provides an important source of energy and protein, which often have higher digestibility and superior amino acid compositions than plant proteins. The measures of beef's sustainability should delve deeper into the multifaceted aspects of the production system, and additional measures can be incorporated into the overall sustainability assessment of the beef industry. Human edible feed conversions can implicate beef's contribution or competition for nutrients with society, while considering the improved protein quality of beef compared to plant proteins. Feed efficiency, specifically residual feed intake, is a measure that can implicate beef's use of environmental resources, while providing producer's an opportunity to select for more profitable cattle that consume less feed. Human edible feed conversions and feed efficiency are only two additional measures of beef's sustainability, but each measure broadens the assessment of the beef industry's ability to meet the triple bottom line.
