A review of literature in this area shows that little significant research addressed the effects of studying abroad upon students' openness to diversity. Further, most studies that have purported to measure study abroad outcomes have failed to use scientifically rigorous methods. This dissertation reports a quantitative study to determine what specific developmental outcome-in terms of openness to diversity-results from students at The Pennsylvania State University participating in an international education program or study outside the United States. The researcher compares measured results with those from a comparison group of students who remained in the United States.

This book, which presents the findings of a long-term evaluation project, provides the kind of systematic and comprehensive data needed to document and give future guidance to programs of study abroad. Using comparative measures, the authors examine the effects of overseas study in terms of education, career, personal satisfaction, and cultural values. Undergraduates in four U.S. college and university programs involving nearly thirty European institutions were chosen for the study. The focus of the research is the role of study abroad in students' acquisition of foreign language proficiency, knowledge of and concern for foreign cultures and international issues, attitudes toward their home country and its values, and career objectives and accomplishments. Student profiles indicate consistent patterns in motivation, achievement, and satisfaction that relate to the experience abroad. In their conclusion, the authors look at the implications of their findings in the context of our times and society and offer suggestions for some new directions for study abroad in the coming years. This analysis will be relevant for educational decision-makers, funding organizations, government, and the research community.

Book excerpt: Studying abroad repeatedly portrays a positive and transformative experience that has lasting effects on students' lives (Hanna, 2016). Food is a key non-institutional factor that plays a role in a student's overall study abroad experience. Therefore, the purpose of this study is to investigate the experience of studying abroad in Florence, Italy on eating behaviors of university students and to determine if food impacts overall study abroad experience. Data for this study was obtained through an Informational Interview with an Italian Psychologist while in Florence, Italy as well as the Study Abroad and Food Experience (SAFE) Survey. The SAFE survey addressed demographics, food experience while in Florence, food experience upon returning home and the extent to which food impacted overall student abroad experience. Results showed that at the two month follow up, 40 participants reported some form of behavior change and after six months, 49 participants experienced behavior change. A mean of (M=7.5, SD=1.7) was found when students were asked to rate on a scale 1-10 the extent that food played a role in overall study abroad experience. In conclusion, the present study shows that studying abroad impacts student's eating behaviors upon returning home to some degree. Nutrition students should study abroad because the present study shows that it can change one's view on food and expand cultural competence.
