Book excerpt: The increasing demand for high-quality beef has led to the necessity of including higher levels of cereal grains and its by-products into cattle diets. In this context, adequate nutrition of beef cattle involves knowledge of energy and nutrient requirements to define specific nutritional strategy. The evolution feeding strategies to feedlot cattle depends on advances related to ruminant metabolism, as well as to the ruminal microbiota. Furthermore, a continuous flow of knowledge development in feedlot cattle nutrition and metabolism is important, as new feeds, additives, or even new management approaches come up very often, and new scenarios will impact protein and energy metabolism, the ruminal microbiota, and also strategies to modulate ruminal fermentation to improve health and performance of feedlot cattle. Overall, the main goal of this Research Topic is to contribute with recent advances in feedlot cattle nutrition and metabolism, addressing studies related to the nutrition of high-performing ruminants, with a special emphasis on the feed efficiency, ruminal fermentation and animal performance. Furthermore, we are interested in different aspects of sustainability and efficiency. In other words, the goal is to attract studies that address such issues, both from a general perspective and in relation to specific domains. Hence, the integration of existing and current knowledge will help refine strategies to optimize the performance of feedlot cattle.

Book excerpt: The objective was to evaluate the effects of tilmicosin fed to high-risk cattle for 14 consecutive days, with or without a live-yeast probiotic blend, during the 42-d study period. In Exp. 1, auction-derived bull (n = 59) and steer (n = 31) calves (initial BW = 220.3 ± 3.2 kg) were randomly assigned to 1 of 3 treatments (3 pens per treatment, 10 animals per pen) consisting of: 1) positive control (TUL) received ground corn top-dress as placebo and injectable tulathromycin on d 0, 2) Tilmovet (TV) received a tilmicosin supplemented diet (0.663 mg/animal/d) from d 0 to 14, and 3) TV with a proprietary live-yeast probiotic blend (TV+; 10 g/animal/d; OptiSafBeef, Phileo, Milwaukee, WI) for the duration of the study. The animals in the TUL group had a 7-d post metaphylactic interval (PMI) because they received injectable tulathromycin at d 0, whereas cattle in the TV and TV+ were eligible to be treated for BRD following 3-d post initial treatment of tilmicosin supplemented in the diet. The TUL group had greater ADG during the first 14-d (P = 0.02) and tended to be heavier than TV and TV+ on d 28 (P = 0.06). Overall (d 0 to 42), TV+ had greater (P = 0.02) G:F than TUL and TV. Overall DMI (P = 0.01) for the TUL group from d 0 to 42 was greater compared to TV and TV+. In Exp. 2, auction-derived bull (n = 68) and steer (n = 22) calves (initial BW = 219.4 ± 2.97 kg) were randomly assigned to treatment pens consisting of: 1) control (TUL) that received ground corn top-dress placebo, 2) Tilmovet (TV) that received a tilmicosin-treated diet (0.663 mg/animal/d) from d 14 to 28, and 3) TV with ground corn top-dress containing a live-yeast probiotic (10 g/animal/d; OptiSafBeef; TV+) for the duration of the study (Fig. 2.7). All treatments were administered ceftiofur on d 0 with a 3-d PMI. Final BW did not differ (P = 0.70). Total starch digestion had a day effect over the 2 collection days (P = 0.02), and a tendency (P = 0.09) was observed for apparent starch digestion to be greater for TUL on d 0. Performance and health outcomes were improved with the administration of injectable tulathromycin in Exp. 1, but there were no health differences and few performance effects noted in Exp. 2. Results indicate oral tilmicosin should not be the primary metaphylactic treatment method in high-risk beef cattle. Delaying oral tilmicosin for 14-d following an injectable antimicrobial slightly improved performance and health, but further research with larger pen replication needs to be conducted.

The first experiment examined the effects of feeding traditional step-up diets (STEP) vs. limit-feeding (LIMIT) the finishing diet to adapt cattle to high-concentrate diets. When all cattle reached ad libitum intake of the finishing diet there was a trend (P = 0.09) for DMI to be different between treatments. During week 1, STEP cattle had higher total VFA concentrations (P = 0.02), while LIMIT cattle had higher valerate absorption (P = 0.02) and disappearance (P = 0.08). During week 4, LIMIT cattle had higher total VFA concentrations (P = 0.03) and lower valerate disappearance and absorption (P = 0.05) than STEP cattle. These results indicate that limit-feeding the finishing diet may inhibit nutrient absorption from the rumen or this method may cause increased production of valerate by lactate utilizing bacteria due to a more acidotic rumen environment. The second experiment examined the effects of feeding 5% (DM basis) dried, full-fat corn germ (GERM) on feedlot performance and carcass characteristics of naturally raised yearling steers and heifers. Carcass-adjusted ADG was higher for GERM cattle (P = 0.04). There were no other differences in performance or carcass characteristics. Total incidence of liver abscesses and the incidence of severe liver abscesses were decreased by 12 and 8.2% (P = 0.01 and 0.02, respectively) when GERM was added to the diet. Corn germ can be added to finishing diets at 5% without affecting performance and carcass characteristics. Producers raising natural cattle may also be able to benefit from the reduced incidence of liver abscesses. The third experiment examined concurrent metaphylactic treatment of high-risk calves with tulathromycin and chlortetracycline. Calves were placed on 1 of 3 treatments: 1) no top-dress pellets; 2) diet top-dressed with pellets containing chlortetracycline; or 3) diet top-dressed with pellets containing no chlortetracycline. There were no differences in the performance or health of these calves (P> 0.25). There are no additive benefits of concurrent metaphylaxis using both tulathromycin and chlortetracycline. This information could assist producers when designing receiving health protocols for high-risk calves.

Production scenarios included implanting at each production level, never implanting, implanting at the cow / calf level only, implanting at the cow / calf and stocker levels, implanting at the feedlot level only, and implanting at the stocker and feedlot levels. The production scenarios were evaluated for the same number of days on feed and feeding to the same slaughter weight. Estimates of the physical effects of alternative implant strategies were obtained by use of the Beef Cattle Growth Model developed at Texas A&M University. Information developed by the model included live, carcass, and retail product weights, carcass fat percentages, feed consumed, and estimated U.S. yield and quality grades by alternative implant scenarios. The study also provides estimates of changes in net returns to producers and cattle feeders and in wholesale and retail gross revenues as implant strategies undergo change.

Their recommendation was for the joint council to focus its efforts first on those pollutants that pose the greatest risk to the environment and public health.
