It is also the perfect time to capture and compile memories from those who were members and/or worshipped at New Zion United Methodist Church. Most of our family members' memories include special occasions, such as the Juneteenth Celebration and the Annual Homecoming / Big Meeting. Since part of our family's culture is to celebrate any and every occasion with an abundance of food, our Juneteenth 2021 Souvenir Book is a combination of the two: EAST TEXAS RECIPES PREPARED THE OLD TIME WAY SERVED WITH PRECIOUS MEMORIES FROM THE GOOD OL' DAYS These recipes are unique, as they were written just as they were given. Slaves were not allowed to be educated, so our ancestors were not familiar with standards of measurements. Therefore, they created their own measurements: a pinch of this, a dash of that, and a shake or two of the other. I recall my Aunt Helen preparing pans of homemade biscuits. She learned to cook from her grandmother (Lula Earls Canton 1878-1962), who was the child of former slaves. There was no recipe to record. Ainee used her hand to scoop the right amount shortening, just as I would have done with a measuring cup. She cupped her hand and gently shook into it the right amount of salt and baking powder, just as I would have done with a teaspoon or tablespoon. Mina Ruth Weathered described the elders in this way: "They might not have been able to read or write, but if you showed them something one time, they had it." That is the same way many of us learned to cook. We were shown what our mothers and grandmothers had been shown - one time - and we had it ... just as Our Ancestors had learned throughout the ages. These recipes are recorded the old time way. Many don't have precise measurements, oven temperatures or cooking times. Those of us who learned to cook the old time way will know perfectly well what to do. Enjoy preparing these delicious recipes the old time way, and cherish each precious memory from the good ol' days.
