Book excerpt: Arsenic is a non-essential trace element that is classified as a Group 1 carcinogen by the International Agency for Research on Cancer (IARC). Arsenic contamination poses a great risk to those who get their drinking water from underground wells, especially in many Asian countries with naturally high arsenic concentrations in the soil. When contaminated water is used to grow crops like rice, significant bioaccumulation of arsenic in the rice can lead to serious health risks to those who rely on rice for most of their caloric intake. The goal of this study was the development of a laboratory for undergraduate analytical chemistry students. Different rice brands were tested for arsenic concentration under different variables to find the optimal setup for a laboratory. Rice samples were taken in 1, 2.5, and 5 gram measurements and digested using either a modified 3050B method or a simple acid digestion. Rice brands were chosen for an even spread of whole rice grains versus rice cereals, and were analyzed using Atomic Absorption Spectroscopy (AAS). Of the rice brands tested, Gerber's Baby Rice Cereal and Sri Lankan whole grain rice performed well across digestion and analysis, with final concentrations of 83.07 μg/kg and 60.70 μg/kg, respectively. The 2.5 gram samples were found to digest and analyze better than 1 or 5 gram samples, as they did not overflow their containers or provide erroneous data during analysis. Neither digestion method showed a consistent trend across rice samples, and digestion of standards alongside each trial showed the digestion methods to be nearly chemically equivalent.
