Book excerpt: Excerpt from The Complete Cook: Plain and Practical Directions for Cooking and Housekeeping; With Upwards of Seven Hundred Receipts; Consisting of Directions for the Choice of Meat and Poultry; Preparations for Cooking, Making of Broths and Soups IT is said that Good wine needs no bush, and according to the same rule a good book should require no apology, (as a preface generally appears to be). In this instance, as we are not the author, we intend to devote the small space allowed us, to the praise of this our adopted work; for, Of all the English books on this subject, none, according to our ideas, possess half the claims to public approval as this one does. The author, whoever he is, is certainly a proficient in his business; and, although making no pretensions to a literary character, has laid down his rules and precepts in a clear and concise manner. Very few additions or alterations have been made in this work; in fact none, excepting Where circumstances rendered it necessary; it being considered best to send it forth to the Ame rican world with all its beauties untouched; at the same time we wish it to be understood that we do so, not because the subject is a barren one on the contrary, were we to condense all the necessary information we have on this science, we should swell our small book to the dignity of a three-volumed work but, by so doing, we should place it beyond the reach Of that class to whom its precepts will prove most valuable. We hav therefore concluded, after due re ection, to leave such labours alone until we have more time and experience. Book The Cooking Manual of Practical Directions for Economical Every Day Cookery

Download or read book The Cooking Manual of Practical Directions for Economical Every Day Cookery written by Juliet Corson and published by Andrews Mcmeel+ORM. This book was released on 2013-10-15 with total page 152 pages. Available in PDF, EPUB and Kindle. Book excerpt: A nineteenth-century cookbook by the founder of New York’s first cooking school providing affordable recipes and kitchen skills for working class American women. Published in 1877, this volume in the American Antiquarian Cookbook Collection was written by one of the “great ladies” of American cooking who founded the first cooking school in New York City to help unemployed working-class women find work as domestics. This exceptional book by a remarkable woman in American culinary history was aimed at answering the question Corson posed in her cooking manual, “How well can we live, if we are moderately poor?” She dedicated her life and her career to providing the answer in this book and others, to suggest recipes for “the most wholesome and palatable dishes at the least possible cost.” Her solutions included the principle of using everything available and wasting nothing, avoiding expensive cuts of meat and using lentils, peas, and macaroni as nutritious alternatives, exploring gardens and fields for new delicious greens, such as dandelions, sorrel, chicory, and other creative cookery techniques. This important book in the American culinary canon expanded the cooking philosophies of many lower- and middle-class women of the day. This edition of The Cooking Manual of Practical Directions for Economical Every-Day Cookery was reproduced by permission from the volume in the collection of the American Antiquarian Society, Worcester, Massachusetts, founded in 1812.

Available in PDF, EPUB and Kindle. Book excerpt: Written by Eliza Leslie, or Miss Leslie as she was commonly called, Directions for Cookery was undoubtedly the most popular cookbook in the 19th century. Published in 1837 in Philadelphia, this clear, concise, and elegant cookbook emphasized the nuances of good cooking, the importance of specific measurements—not always a common practice at that time—and the significance of good ingredients to prepare the best food in the kitchen. Directions for Cookery is surely an American classic. With recipes for Beef-Steak Pudding, Moravian Sugar Cakes, Cat-Fish Soup, Johnny Cake, Indian Pudding, Molasses Candy, New York Cookies, Pumpkin Chips, Tomato Catchup, and Election Cake, Directions for Cookery sparks your appetite and makes this classic culinary work an invaluable addition to any kitchen. This edition of Directions for Cookery was reproduced by permission from the volume in the collection of the American Antiquarian Society, Worcester, Massachusetts. Founded in 1812 by Isaiah Thomas, a Revolutionary War patriot and successful printer and publisher, the society is a research library documenting the lives of Americans from the colonial era through 1876. The society collects, preserves, and makes available as complete a record as possible of the printed materials from the early American experience. The cookbook collection comprises approximately 1,100 volumes.

Download or read book The Complete Cook written by J.M. Sanderson and published by Andrews McMeel Publishing. This book was released on 2013-10-15 with total page 198 pages. Available in PDF, EPUB and Kindle. Book excerpt: Published in 1843 in Philadelphia, this volume in the American Antiquarian Cookbook Collection is derived from an earlier English work that author J. M. Sanderson heavily adapted for American usage, creating not only a cookbook that combined the best of American and European cooking of the time, but perhaps one of the first “international” cookbooks. James M. Sanderson’s The Complete Cook contains over 700 recipes, including “directions for the choice of meat and poultry; preparations for cooking, making soups and broths; boiling, roasting, baking and frying meats, fish; seasonings, colourings, cooking vegetables; preparing salads, clarifying; making of pastry, puddings, gruels, gravies, garnishes, and, with general directions for making wines.” According to the title page and his introduction, Sanderson clearly states that the majority of his book was copied heavily from a well-known English work, and he is but the adaptor. We now know the uncredited author was W. G. Lewis. Sanderson’s small contributions throughout create an excellent combination of American and English cooking. For example, he provides an American recipe for Pumpkin Pie alongside the English version, comments on cooking in the excessive heat of the West Indies, and refers to a superior English method for boiling meat without contact with the water. There are quite a few American recipes cited with their English counterparts and referred to as “the American mode,” for example, “The American Mode of Dressing Salt Fish.” This edition of The Complete Cook was reproduced by permission from the volume in the collection of the American Antiquarian Society, Worcester, Massachusetts.
