En el primer capítulo se explican los sistemas y métodos de conservación de alimentos para los productos que se utilizarán en la elaboración y la presentación comercial de géneros y productos culinarios. Se lleva a cabo, además, una revisión de los equipos asociados a la conservación de los alimentos. El segundo capítulo se dedica a las normas de control aplicables a la conservación de los géneros, tanto en su ejecución como en el control de la seguridad y la calidad de los alimentos. Por último, en el tercer capítulo se presta especial atención a la forma de almacenar y conservar los géneros según su naturaleza, con especial hincapié en el proceso de recepción y control de mercancías, al acondicionado posterior y a las normas higiénico-sanitarias del almacenamiento. Además, cada capítulo cuenta con tablas y cuadros de ejemplo, de información importante o de información adicional, que, junto a las numerosas imágenes (algunas de las cuales son fotografías realizadas por el autor con el fin de añadir un valioso complemento visual a los textos), favorecen la comprensión del contenido y lo completan. También se ofrecen útiles actividades finales al término de cada capítulo que permiten al lector poner en práctica, repasar y afianzar los conocimientos adquiridos. Asimismo, el enfoque elegido es práctico y el lenguaje empleado, claro y sencillo, para que la comprensión y el aprendizaje de los contenidos sean lo más efectivos posible. Por ello, esta obra es una herramienta utilísima e imprescindible tanto para los alumnos como para los profesores que vayan a impartir los contenidos de este módulo formativo.

Easy, quick and economical to perform, it enables staff to check the nutritional status of elderly people when they enter hospitals or institutions and to monitor changes occurring during their stay. Moreover, the MNA is predictive of the cost of care and length of stay in hospital. This publication will be of immense assistance to heads of geriatric teaching units, teachers in nutrition, clinicians general practitioners and dieticians, enabling them to better detect, recognise and start treatment of malnutrition in the elderly.
