Book Concepts in Plant Metabolomics

Download or read book Concepts in Plant Metabolomics written by B.J. Nikolau and published by Springer Science & Business Media. This book was released on 2007-04-03 with total page 298 pages. Available in PDF, EPUB and Kindle. Book excerpt: Like genomics, which defines genes in a genome irrespective of functionality, metabolomics profiles all metabolites in a biological sample irrespective of the chemical and physical properties of these molecules. Metabolomics can potentially define cellular processes by providing a measure of the ultimate phenotype of an organism, characterized by the collage of small molecules whose levels of accumulation is altered in response to genetic and environmentally induced changes in gene expression.

Book Amino Acid Composition and Biological Value of Cereal Proteins

Download or read book Amino Acid Composition and Biological Value of Cereal Proteins written by Radomir Lásztity and published by Springer Science & Business Media. This book was released on 1985-07-31 with total page 686 pages. Available in PDF, EPUB and Kindle. Book excerpt: Cereals belong to the most important elements in the history of mankind. From the beginning of agriculture, cereals have been by far the most important staple food in the world. Although the cereal consumption decreased to a low level in the developed countries in Europe and North America, in the devel oping countries over two-thirds of the calorie and protein intake is based on cereals. A substantial quantity of cereals goes indirectly into food via feed to animals. Generally, cereal proteins are classified as proteins of lower biological value because of shortage in lysine and some other essential amino acids. Recent developments in the de termination and evaluation of the biological value of proteins and protein mixtures suggest that the oversimplified earlier evaluation of cereal proteins must be reviewed. This book contains the edited proceedings of the Inter national Symposium on "Amino Acid Composition and Biological Value of Cereal Proteins", held in Budapest, Hungary, Hay 31- June 1, 1983, under the sponsorship of the International Association for Cereal Chemistry, Hungarian Scientific Society for Food Industry and Grain Trust, Hungary, with supplemental invited contributions. Scientists (biologist, plant breeders, farmers, chemists, biochemists, engineers, food technologists and nutritionists) from 17 countries presented and reviewed, along with partici pants from 20 countries, the recent methodology and trends in the determination of the biological value of cereal proteins, v the amino acid composition of cereal proteins and factors in fluencing the composition and the role of cereal proteins in nutrition and animal feeding.

Book Engineering Aspects of Cereal and Cereal Based Products

Download or read book Engineering Aspects of Cereal and Cereal Based Products written by Raquel de Pinho Ferreira Guine and published by CRC Press. This book was released on 2013-07-15 with total page 370 pages. Available in PDF, EPUB and Kindle. Book excerpt: Cereal food engineering has become increasingly important in the food industry over the years, as it plays a key role in developing new food products and improved manufacturing processes. Engineering Aspects of Cereal and Cereal-Based Products focuses on the recent growth in cereal technology and baked foods science, reviewing the latest updates in technological developments in agricultural cultivation and processing for cereal scientists, food engineers, and students. Cereals include a vast number of biochemical entities, very diverse in composition and properties, as well as technological abilities. The text discusses cereal production, which varies according to cultural practices, type of cereal, cultivar, and region. It also addresses transportation, storage, and cereal quality—important at every phase from harvest to production. Chapters cover technological operations such as wet and dry milling and extrusion, and they address particular processing operations that are subject to improvements, including bread and confectionary baking. The text also examines malting, rice processing, breakfast cereals, and pasta. In addition, it explores new trends in cereal-based products and the effects of processing on nutritional and functional properties of cereal products. This book discusses the basic elements of cereal technology, from production to transformation, including the most important processing operations in cereal technology, with emphasis on the engineering aspects.
