Book excerpt: Abstract: The complexity of food production, transportation, manufacturing, and marketing has given rise to the necessity of formulating international standards and policies for food control; this subject was addressed by the Food Law Research Centre set up by Brussels University in 1975. The goal of the Centre's investigations was to define the characteristics of European food laws, analyze the principles, trends and aims on which the laws are based, and trace their evolution. The resulting study is presented along the following lines: general definition of food law, the necessity for it, and the underlying principles; the concept of food as defined by each European country; socioeconomic, geographic, and sociolegal factors; national characteristics as motivation for laws; criteria of food quality (e.g., vitamination, diet foods, use of enzymes or irradiation, additives); various structures of local or national law; regulatory organizations and procedures; methods of control and judicial sanction; and consumer education. Food education has gained increasing scientific and political importance in many countries as a promising way to change contemporary eating. However, many practices fail to address two epistemological obstacles regarding its very components – ‘food’ and ‘education’. Food has largely been thought of from a nutritionistic viewpoint alone and the ethical issues over children’s freedom of choice and well-being have been absent. This book resolves these problems by applying ethical and sociological theories of food and analysing food education in two pioneering countries: Japan and France. The book focuses on taste education and gastronomy as two key concepts which have great potential to positively impact food education. Taste education is a promising alternative to nutrition-centred pedagogy which foregrounds the experience and pleasure of eating food, creating an environment for taste sensibility and food curiosity. From taste education, the picture can be broadened to examine the role and impact of gastronomy in food education. Examining the cultural traditions of France and Japan reveals how gastronomy can impact eating habits and food cultures and how these criteria should be an intrinsic part of food education. The book concludes by constructing an integrative theory for food education that moves beyond nutrition-centred education for the benefit of one’s well-being. Book excerpt: Stomachs of 2,377 gag caught by hook aM line from April 1979 through October 1981 from Nortb Carolina, south Florida, west central Florida, and northwest Florida were examined. Data were analyzed for variations between area, size of fish, and season by using percentage volume and percentage frequency. of occurrence. About 59% of the stomachs were empty. The percent volume of fish ranged from 95.1% in northwest Florida to 99.8% in south Florida. Twenty-five families of fish were represented in the diet. Six families were oominant: Clupeidae, Sparidae, Carangidae, Sciaenidae, Mugilidae, and Haemulidae. The dominant fish species were Sardinella aurita, Iagodon rhomboides, and Decqpterus punctatus. Invertebrates never exceeded 5% of the total volume or 12% in occurrence in any area. Relatively minor differences in diet among size classes and among seasons were noted; however, between areas the diet varied considerably.
