Book Ratio

  • ISBN : 1416566120
  • Pages : 307 pages

Download or read book Ratio written by Michael Ruhlman and published by Simon and Schuster. This book was released on 2009-04-07 with total page 307 pages. Available in PDF, EPUB and Kindle. Book excerpt: Michael Ruhlman’s groundbreaking New York Times bestseller takes us to the very “truth” of cooking: it is not about recipes but rather about basic ratios and fundamental techniques that makes all food come together, simply. When you know a culinary ratio, it’s not like knowing a single recipe, it’s instantly knowing a thousand. Why spend time sorting through the millions of cookie recipes available in books, magazines, and on the Internet? Isn’t it easier just to remember 1-2-3? That’s the ratio of ingredients that always make a basic, delicious cookie dough: 1 part sugar, 2 parts fat, and 3 parts flour. From there, add anything you want—chocolate, lemon and orange zest, nuts, poppy seeds, cinnamon, cloves, nutmeg, almond extract, or peanut butter, to name a few favorite additions. Replace white sugar with brown for a darker, chewier cookie. Add baking powder and/or eggs for a lighter, airier texture. Ratios are the starting point from which a thousand variations begin. Ratios are the simple proportions of one ingredient to another. Biscuit dough is 3:1:2—or 3 parts flour, 1 part fat, and 2 parts liquid. This ratio is the beginning of many variations, and because the biscuit takes sweet and savory flavors with equal grace, you can top it with whipped cream and strawberries or sausage gravy. Vinaigrette is 3:1, or 3 parts oil to 1 part vinegar, and is one of the most useful sauces imaginable, giving everything from grilled meats and fish to steamed vegetables or lettuces intense flavor. Cooking with ratios will unchain you from recipes and set you free. With thirty-three ratios and suggestions for enticing variations, Ratio is the truth of cooking: basic preparations that teach us how the fundamental ingredients of the kitchen—water, flour, butter and oils, milk and cream, and eggs—work. Change the ratio and bread dough becomes pasta dough, cakes become muffins become popovers become crepes. As the culinary world fills up with overly complicated recipes and never-ending ingredient lists, Michael Ruhlman blasts through the surplus of information and delivers this innovative, straightforward book that cuts to the core of cooking. Ratio provides one of the greatest kitchen lessons there is—and it makes the cooking easier and more satisfying than ever.

Book Koko Ken

Download or read book Koko Ken written by Ken Martinez and published by Trafford Publishing. This book was released on 2013-02-14 with total page 311 pages. Available in PDF, EPUB and Kindle. Book excerpt: In the early 80s, recovering from my divorce, I moved from Ketchum, Idaho, to Palo Alto, California, to live temporarily with my sister Martin and her family, the other Martins, until I found an apartment. My brother-in-law was and still is a pastor in the Nazarene church. Also attending the church were two college mates of mine and the Martins, Jan and Doug Burgesen and their two children (the two kids, Stevie and Cindy, not Doug and Jan) who could not pronounce Uncle Ken. It came out Koko Ken. Soon, very soon, I was known to the whole church (even to my niece Jennifer and my two nephews, Todd and Gabe) as Koko Ken, which gave me the title of this book. Because of a birth defect, spina bifida (the definitions in the book), I wasnt expected to live past six weeks. As of this writing, October 1, 2012, Im six weeks shy of sixty-two years old. Ive lived a very fortunate life. Ive hiked up two volcanoes, Lassen and Diamond Head. Ive ten speeded down Mt. Haleakala. I played Chopins, King Faruks, and Carnegie Halls pianos. Read my book. Its funny. Its sad. Its me. Im almost a George Plimpton.

Book What Are Wisdom and Intelligence

Download or read book What Are Wisdom and Intelligence written by James Kelley and published by Xlibris Corporation. This book was released on 2010-02 with total page 433 pages. Available in PDF, EPUB and Kindle. Book excerpt: To whom it may concern, "What are wisdom and intelligence" chronicles the life of an average American's struggle through a society eclipsed by a manmade distortion of true reality. This 430 page book shows people the everyday rollercoaster of an average Jim in 65 chapters peppered with the morals, ethics and coping skills learned through life experiences. Written for my children, this book has an i...ntense feel of introspect; and by reading this material, it will take you back to a lot of your own memories and give YOU back to the basics of YOU. This book will show you the simple things that are becoming lost in a society distracted by the complexities of life itself. "What are wisdom and intelligence" doesn't speak of the actual meaning of wisdom and intelligence but instead poses the question of whether our society needs to ask this question in the first place or does society automatically judge a person by there wisdom and intelligence? This unique view of the simple man's life brings back a sense of integrity through making bad decisions and seeing the results first hand. These missteps are further compromised due to the apathy of our time. Society has become too complicated in its own intelligence. People with a lot of education think that they have all the answers and often times refuse to listen to "the common man's" wisdom. Here in lies the premise of my book and the average "Jim's" plight. My life and in turn my book is filled with "the simple things in life that save us all." Integrity, morals, ethics and a simple smile are the tools of an average Jim. My experience is life itself, nothing more and nothing less. I was a Jack of all trades and master of none. I started as a Marine and then did a bit of everything; truck driver, cowboy, fence contractor, restaurant manager, and taxi driver just to name a few. Also at one point, I hitch hiked across the US. My strength and wisdom came with time, as it should. The common sense approach to life is what brings me around to today. My daily inspirational thoughts on the internet have become strength for many and in time, I hope, will be one of the strengths of my book. My public speaking, thus far, has been filled with music, laughter and inspiration. People are searching, in many ways, for answers when they are right there in front of them and that is what makes this book so inspirational and introspective. People see themselves through the words I give to my children and in turn find the joy in their own life. There are no magic words to restore the basic realities of life but in there own minds. All they need to do is take away the distortions of wisdom and intelligence. I truly appreciate you taking the time to look at my simple book of life and hope that it will be the inspiration for you to want more. Please feel free to contact me and hope to hear from you soon. Thank you so much for your time. Respectfully, James H. Kelley

Teenagers sometimes do the darndest things, but in Kevin and Louis' case, it's a stroke of wisdom wrapped in fool's gold. In a time not so long ago, in the days of JIM CROW and NO IRISH NEED APPLY signage, the world made it clear to those regarded as the fringe. "Stay away." To those who know no better - or perhaps know best, such lines are only meant to be crossed, or why else would they be drawn.
