It is now being included in some legal instruments, although for the most part caselaw does not explicitly make that connection. Neither the right to life nor the rights to health or to normal development are actually cited in the resolution of cases and in judges' decisions. This volume makes the connection explicit in a broad review of human rights and legal issues associated with public health and the environment. It will be particularly useful as many legal instruments emphasize the right to 'development' without fully discussing the necessary safety and public health aspects, and the respect for the ecology of any area where such 'development' (often unwanted by local or indigenous communities) is to be located. Climate change is another pressing variable that is considered, and several chapters address the interface between human health and ecological conditions. Overall the book integrates perspectives from a wide range of disciplines, including ethics, ecology, public health and epidemiology, and human rights and law.

Ging es noch vor 50 Jahren in vielen Industrieländern um die bloße Ernährungssicherung, so besteht heutzutage ein breites Angebot an Lebensmitteln, das in dieser Vielfalt nie zuvor da gewesen ist. Ermöglicht wird dies durch eine hoch effiziente Landwirtschaft und einer modernen Lebensmittelindustrie. Doch der gestiegene Bedarf an Lebensmitteln kann fast ausschließlich durch Massenproduktion gedeckt werden. Dies hat unkalkulierbare Auswirkungen auf die Natur und den Menschen. Bodenerosion, Trinkwasserbelastung, Pflanzenschutz- und Arzneimittelrückstände, Massentierhaltung, Zentralisierung und Konzentrierung von Betrieben sowie schlechte Arbeitsbedingungen in den Entwicklungsländern sind nur einige Folgen der Massenproduktion von Lebensmitteln. Aufgrund der nur schwer abzuschätzenden Langzeitfolgen und der Gefahr, dass zukünftige Generationen diesen Wohlstand nicht mehr ausschöpfen können und des gegenwärtigen Raubbaus an der Natur hat sich das Leitbild einer nachhaltigen Ernährung entwickelt. Dieses Leitbild wird durch verschiedene Modelle erklärt beziehungsweise ergänzt, in dem die positiven Auswirkungen einer nachhaltigen Ernährungsweise beziehungsweise die negativen Folgen der Produktion auf Masse in den verschiedenen Bereichen wie, der Gesellschaft, Natur, Wirtschaft, Politik und des einzelnen Menschen analysiert werden kann. Spätestens seit der ersten Öko-Verordnung (EWG) Nr. 2092/91 im Jahre 1991 sind Bio-Lebensmittel fest im europäischen Markt integriert. Dies hat zu zahlreichen wissenschaftlichen Aktivitäten geführt, um die Frage zu beantworten, wodurch sich Bio-Lebensmittel von konventionell hergestellten Lebensmitteln unterscheiden. (Mayer-Miebach, 2010) Ob Bio-Lebensmittel ernährungsphysiologisch wertvoller sind oder im Sinne des Leitbildes einer nachhaltigen Ernährung ökonomisch, soziale und/oder ökologische Auswirkungen haben, soll in dieser Arbeit anhand eines ausgewählten Modells näher recherchiert werden.

This n- urally and fairly stable product has been and is being used by many human societies as a common or enjoyable beverage, as an important means to improve the quality of drinking water in historical times, as therapeutical agent, and as a religious symbol. During the last centuries, wine has become an object of scientific interest. In this respect different periods may be observed. At first, simple observations were recorded, and subsequently, the chemical basis and the involvement of microorg- isms were elucidated. At a later stage, the scientific work led to the analysis of the many minor and trace compounds in wine, the detection and understanding of the biochemical reactions and processes, the diversity of microorganisms involved, and the range of their various activities. In recent years, the focus shifted to the genetic basis of the microorganisms and the molecular aspects of the cells, including metabolism, membrane transport, and regulation. These different stages of wine research were determined by the scientific methods that were known and available at the respective time. The recent “molecular” approach is based on the analysis of the genetic code and has led to significant results that were not even imaginable a few decades ago.
