Book excerpt: Excerpt from Beliefs and Values in American Farming The fundamental relationship between beliefs and values should be noted. Beliefs and values may sometimes be used interchangeably. If one values the concept of equality of economic opportunity, he also affirms his belief to what that concept means to him. Values are hierarchically so arranged that it can be said at a given time that some values are considered more basic than others. Instrumental values, those which are means rather than ends in themselves, contribute to the realization of more basic values, or goals. The value (normative belief) which suggests that a farmer should become the full owner of his farming operation may be a means to the achievement of the more basic value (normative belief) that a farmer should be independent. Clearly, the importance of the value of full ownership changes as the importance of the value of independence changes. However, if full ownership is judged an ineffective means of achieving independence, full ownership may be discarded as a goal and assume a less important position in one's hierarchy of values. In more explicit terms, a goal is a condition, not yet established or attained, which some entity is trying or could try to attain (42, p. Goals may be either ends or means to ends. If the achievement of goal A is prerequisite to the achievement of goal B, goal A can rightfully be described as both an end and a means to an end. Beliefs and values are concretely related to the future through goals. What men perceive to be true, worthwhile, and desirable is re ected in the way in which they anticipate and therefore shape the future. Indeed the renowned father of agricultural science: Liebig - when he propounded his mineral theory, which was that the ashes of plants contained everything which they drew from the soil, and that if the mineral substances contained in the ashes, were supplied in sufficient quantity to the crops, there would be scarcely a limit to the product, excepting the space in which they were contained - knew nothing about the invaluable nitrogen which we now know to be wholly indispensable to plant growth. But light has grad ually dawned upon us, and by slow and sometimes faltering progress, there has been built up a system of agricultural science which explains the laws of plant growth and affords the most important information to the cultivator of the soil. Science is based upon fact. Philosophy is based upon speculation. Science is the outgrowth of philosophy, be cause before we can reach a true knowledge of any fact we must approach the study of it by a well devised theory, changed as may be necessary, and tested patiently and slowly until the knowledge sought is found. This know ledge, when verified by practice, sufficiently proved and classified, becomes science. Science then is nothing for the farmer to fear, or cast doubt and suspicion upon. Theory as has been said, has no part or lot in it; it is a summary of known facts, and is therefore of the most valuable use to the farmer as it gives him a sound basis upon which to build up such conclusions in regard to his practice as will enable him to meet the various difficulties which are al ways arising in his work. American Farmers Manual, 1900 For green fodder and the silo. Of Japanese Millet several pieces, of an acre or more each, were sown for feeding green or for the silo. The earliest, sown broadcast about the middle of May on rich land, one peck of seed to the acre, averaged about six feet in height, and produced over 15 tons per acre. This was cut from day to day, beginning before the millet had blossomed. Another field of about an acre, sown the last of June, yielded at the rate of rather over 18 tons per acre. Another field, sown July 26th, after a cr0p of hay was removed, yielded about 12 tons per acre. The crop of the two last fields was put into the silo. That cut from day to day, and fed to cows, was much relished. Its superiority to well-eared flint corn fodder was very apparent. Cows with both before them always take the millet first: they consume it without waste, while they are apt to leave a art of the stalks of the corn as it approaches maturity. In alternating this ccd with corn fodder, the cows invariably increased in milk when put upon the millet, and fell off when changed to corn. It has been ensiled with soja beans, - about two parts by weight of the millet and one of the beans. This combination makes very superior silage. Book excerpt: Excerpt from Chicory Growing as an Addition to the Resources of the American Farmer Sir: I have the honor to submit herewith, for publication as a Bulle tin of the Division of Botany, a manuscript entitled Chicory Growing as an Addition to the Resources of the American Farmer, prepared under my direction by Mr. Maurice Gr. Kains. As the report contains chapters on the adulteration and chemical analysis of chicory, it has been submitted to the Chemist of the Department, Dr. H. W. Wiley, who has revised those portions of it. In the year 1896 the United States imported pounds of chicory, having a wholesale Value of Most of this chicory was grown in Belgium. In the belief that chicory could be made a profitable crop in the United States, we began an investigation the results of which are embodied in this report. The Department of Agriculture may confidently recommend the cultivation of chicory in the mid-northern belt of our country. Its cultivation, however, as a market product on a farm should be undertaken only when a chicory mill, where the crop can be disposed of, is close at hand, or when the farmer can grow the root on a sufficiently large scale to own and work his own mill. As a home product, however, its cultivation may be much more general. There is no reason why the individual farmer should not grow, dry, and roast the chicory used upon his own table if he desires to pursue this course, instead of purchasing the pure manufactured product. He is certainly entitled to exemption from its purchase at an exorbitant price in the form of supposed ground coffee. It should be considered, however, by those who propose to take up the cultivation of chicory as an agricultural industry, that a very limited area will produce all the chicory we customarily import, and that over production of this crop would be easy.
